CRUMBLE TOP BLUEBERRY MUFFINS
After eating 10# of blueberries and starting with 5 more pounds, I am crying uncle and baking with the rest.

This recipe makes 8 large muffins and that is the recipe I will list
BUT I made mine much smaller using same measurements but baked them for 15 minutes
Oven at 400 degrees
MUFFINS
1 1/2 cups flour
3/4 cup white sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup vegetable oil, I used canola
1 large egg
1/3 cup milk
1 cup blueberries (I used 1 1/4 cup)
CRUMB TOPPING
1/2 cup white sugar
1/3 cup flour
1/4 cup softened butter, cubed
1 1/2 teaspoons ground cinnamon
Preheat oven to 400 degrees
Grease 8 muffin cups or line with paper liners

    Those muffins look so darn tasty too. I've been reviewing your recipes and I can't believe that you mentioned the one most important thing that I am truly after. I am after the crunch you get when the boiled frosting is made. I'm going to make a cake and I want to make this frosting. Only thing that I want to be able to achieve is getting that slightly little crunch when the frosting has had some time to set up and dry a bit. My mom used to make it for me on my Birthday. I hope you could shed some light on how to make sure and get it crunchy. My mother would put it in the fridge when she would be done with it, cake, frosting, and all overnight and have it all set up for me the next day. Do you think that putting it in the fridge overnight, and then serving it the next day, by taking it out of the fridge 30 minutes before serving, may have helped it to get a little crunchy? I just would like your thoughts, as they may help me with the frosting getting hard/crunchy. Thank you for your thought! ❤❤🎉❤🎉❤

      Louis, I answered your question just now at the 7 minute frosting site.. I think the corn syrup is the secret. It is always like magic to me when it starts from liquid and then firms into this magic cloud!! I don't know if it is the weather conditions that makes the crunch, but it doesn't happen every time. Never heard of putting it in fridge, but may try that next time. Usually you know within a half hour if you have the crunch. Good luck and keep me posted

    I have been looking for this frosting with the crunch! How can I make sure that the frosting will come out crunchy? I've been after this crunchy frosting for so long. Some people have told me that when they make it they will have the egg whites all beaten till quite stiff and to get the sugar syrup to a temperature of 138 degrees Farenheight. Then they add in the hot syrup very, very slowly to the egg whites, and that if you let it sit i. The fridge overnight or even just that day for a few hours it will have developed that crust on it. I'm just looking for the crunchy frosting for sure. What are your thoughts? Thank you. ❤🎉❤

      I make mine with all ingredients, except vanilla, in the saucepan at once. No pouring hot liquid over egg whites. The vanilla is added after the 7 minutes. And it is usually 7 minutes. Sometimes I have to go a little longer, depends on weather, at least that's my excuse! And using corn syrup helps with the crunch. It doesn't happen every time, but when it does, it's magic!!

      @vonnieskitchenmartinsshack5544 "The Big Red Cookbook from Betty Crocker" 9th Edition p. 53 (Please pardon any grammar or punctuation errors) 1 cup all-purpose flour 1/2 cup butter 2 TBSP water 1 cup water 1 cup all-purpose flour 1 tsp almond extract 3 large eggs Powdered sugar glaze 1/4 cup sliced almonds 1. Heat oven to 350° 2. Place 1 cup of the flour in a small bowl. Cut in 1/2 cup butter, using pastry blender or crisscrossing 2 knives, until mixture looks like small peas. Sprinkle 2 tbsp, water over mixture; mix in with fork. Round dough into ball; divide in half. Pat each half into 12 X 3 - inch strip about 3 inches apart on ungreased cookie sheet. 3. Heat 1/2 cup butter and one cup water to a rolling boil in 2 1/2 quart saucepan. Stir in 1 cup flour and the almond extract. Stir vigorously over a little heat about 1 minute or until mixture forms a ball; remove from heat. 4. Beat in eggs all at once; continue beating until smooth. Divide in half; spread each half evenly over strips. 5. Bake about 1 hour or until topping is crisp and golden brown. Cool 30 minutes. Frost with Powdered Sugar Glaze. Sprinkle with almond.       Great question so I googled it. This is from insanelygoodrecipes.com Unlike most cakes, angel food cake is not loaded with butter and oils. Because of this, it loses moisture and dries out much sooner. That’s why you need to freeze it as soon as possible, to keep its soft, moist, and airy texture. How to Freeze Angel Food Cake Here’s how: Slice the cake in individual pieces. Wrap each slice in 2 layers of plastic wrap and/or aluminum foil. A double layer of protection will help prevent freezer burn (that awful process of food absorbing the odor of items nearby). Place the wrapped slice in freezer-safe bags. Squeeze out excess air and seal the bags. Label the bags with the current date to know how much time it has left. Angel food cake will keep well in the freezer for up to 4-6 months. Place the bags in a plastic container such as a Tupperware and freeze. This will prevent the cakes from getting squished by other items in the freezer. Consume the cake within 6 months.

      Actually, Kev, the original recipe calls for no tomatoes. And I don't know about draining them if you add them to the pot. Probably the best bet is to delay the tomatoes until the nachos are done and serve with say sour cream or lettuce or whatever
