- This recipe comes from my friend, Sally, and the eggs come from another friend, Suz
I did the basic recipe for you but you can add many other ingredients: jalapenos, green peppers, scallions, bacon on and on
Use shredded hash browns
Set oven to 425 degrees for the first half and then lower to 350 degrees for second half
9" pie plate
3 cups frozen shredded hash browns thawed
1/4 cup butter melted
1 cup pepper jack cheese, shredded
1 cup swiss cheese, shredded
1 cup fully cooked ham, diced
1/2 cup cream
2 eggs
1/4 teaspoon salt
1/4 teaspoon pepper
1. Press thawed shredded hash browns between towels to remove excess moisture
2. Grease the pie pan with 2 teaspoons butter
3. Press hash browns onto bottom and up sides of the pie plate
4. Pour rest of butter over the top
5. Bake at 425 degrees for 25 minutes or until edges brown
6. Reduce oven to 350 degrees
7. Combine cheeses and ham and spoon into crust
8. In a bowl, whisk eggs, cream and salt and pepper and then pour over cheese and ham
9. Bake at 350 degrees for 28 minutes or until a knife put in center comes out clean
10. Let stand 10 minutes to set up cheese
11. Enjoy....that's an order!!!

Thanks, Renae! Don't tell anyone, but I'm thinking of putting together a cookbook of recipes I've done and maybe one's for the future. I will have to have some spare time to do this and with spring and the garden, it may take a while!!! So far the idea is a pdf file folks could just download. Who knows!!!???

While we desperately need rain, the bluebell woods is probably under water this year!! We have a few in our yard and a few are just beginning to bloom so perhaps in the next couple of weeks we'll have some drainage so we can see them. If so, I'm posting a picture!!! They are stunning.
