Cheese & Onion Quiche for Beginners

- Here's the recipe:
You'll need Ready Made Shortcrust Pastry 500g
For the Filling for 9 inch Quiche dish
150ml of Milk
4 Medium Eggs
Salt and Pepper to season
3oz /85g of Mature Cheese or alternatively your favourite hard cheese
1 Medium Onion (diced)
Place in pre heated oven 190c or 170c if fan assisted - thats 374f or gas mark 5 - For around 30 minutes give or take. This quiche is perfect served at room temperature - but is equally as good hot or cold - Enjoy xx

Thanks for this. I'm planning on making my first ever quiche today. I was confused around blind baking and sautéing the onions and whether it really was necessary. I will definitely follow your method. If my turns out like that the family will be chuffed :-)
Great to hear. As long as you cut the onions finely and bake in the oven for a good 35 - 40 mins, the quiche will be just fine. Happy quiche making to you ❤️

Oh my goodness😲I have just made 4 large quiches following your advice. They taste beautiful. Pastry does NOT need baking blind as all these chefs keep stating. Pastry is beautiful, not soggy, its got a little bite to it. Not frying the onions works! the quiche tastes like it should, much better than shop bought. Thank you very much!!! Teresa

Am I the only one that found it funny when she said ‘I like it raw’ and laughed ???? Also thanks for the video. My mom used to make this with me when I was a kid and I never remember her cooking the onions and I’m sure now that’s what we did.

this recipe is much easier amd simpler and cheaper than other quiche recipes. they will tell you it must be with cream or must be prebaked lol. i made it myself and never prebaked. this recipe is great! i must try with just onion and cheese :) thank you

Cheese & Onion Quiche is my favourite and it’s hard to come by a decent one nowadays. I really want to make my own but I’m rubbish at pastry. I hope this method works out for me 😂
Little tip place a tray in oven when heating oven. Then place quiche on tray. The heat from tray will help cook the bottom of pastry. Give it a go, I have every confidence. 😍
Does blind baking make the pastry crispy I do like crispy. Could u let me know please. I was thinking of buying the beads! I have exactly the same dish by the way.
Yes blind baking always is best, if you check out my bakewell tart recipe it will show you how to blind bake. Omit the sugar from the recipe and you will have delicious shortcrust pastry for your savoury quiche xx Hope that helps? X

Would a crustless quiche work on this recipe? Like could I follow the same steps and get the same result as above but without the crust around the sides? (I'm only wanting a crust base on the bottom)
Absolutely.. but I'd suggest you grease the sides well and dont try to remove from quiche dish until it's cool as it has time to then shrink from the sides. To be doubly sure run a knife around the edge xxx

Lovely easy recipe & just what I was searching for. Only thing I added was a thin layer of tomato chutney spread onto the baked pasty, but everything else was the same. It was sensational....many thanks

If you ensure the pastry is rolled thinly, it will require between 35 - 40 minutes. Hope that helps? X

Yes you can freeze quiche once it has been baked and can be frozen for around 2 to 3 months.
Sorry didn't ask it right my question is if I make chicken and veg pie with short crust pastry and don't blind bake it just normal way will it be soggy ?
@@AMY-hn8bd Amy of course you can, you don't need to blind bake a pie. Simply place a baking tray in oven to heat up, then place the pie on the hot baking tray and the heat from the tray will cook the bottom of your pie. Hope that helps? X
Hi. Today I followed your recipes and I made your Keaiche. The only challenge I had was the inside was still soft and break away. I put 250g of cheddar mature cheese.

I'm unsure, but I do know the amount of cheese you used is much more than I recommend for this quiche. You've used 4 times more cheese than in my recipe. X

You certainly can Catherine, I'd recommend single cream, which is still rich but not too rich, that it over powers the recipe. Hope that helps? Xx

I tried doing a quiche but it was more like an omelette
I suppose an omelette is basically the same without the pastry, the combination of egg, a little milk and added cheese, meat or vegetables. Xx

Worried about soggy crust
If you place a tray in oven as it heats and then place quiche dish on the hot tray throughout baking - you'll not have soggy base x
I was looking for a recipe for a very basic cheese and onion tart where the onion still has a crunchiness and almost rawness and the cheese strong, almost chunky and "in your face". Not looking for "light" or "creamy", just a lovely fresh taste like a chesse and onion sandwich almost. Think I have found what I'm looking for here and going to give it a go. I wonder if it would work with spring onions with plenty of the green part?
Oh yes, I totally understand what you mean. they still retain their semi rawness. Of course use spring onions, they'll be lovely too. 😍
