I made this yesterday and it was DEEEEELICIOUS!!! I subbed pancetta for the bacon and added a small amount of chopped red bell pepper for color and whew!!! I had some for breakfast and dinner today, this is excellent!!

@ Laura in the Kitchen , Mrs Laura Vitale this looks delicious & being a 57 year old Irishman from rural Kentucky i'm going to give this a try as i have never had quiche of any kind, but have heard of it & swiss gruyere is my # 1 fave cheese & i know quite a lot about cooking all kinds of potatoes, me being irish , lol. I have many tips for prepping & cooking all types of potatoes & recipes. A tip for your soaked shredded hashbrowns, after soaking, whether you hand wring them dry or in a tea/dish towel, put them in your salad spinner & crank it for appx. 2 minutes ( easy clean up on the salad spinner) & really gets a lot of water out & they dry better for browning, i hope that helps as it does work. EXCEPT: When the old chef actually followed the recipe, an use a crappy, but correct sized pan. Quiche was delicious; crust sucked donkey toes. Took the quiche, re-did bottom in Cast iron on stove top. Much better. Y'all are welcome!

I was telling my mom that we should have a quiche for Easter. And here is a video of you making quiche to serve for Easter. Love it. My mom is making a fruit salad and we have some toast, coffee (I go for tea) and a glass of mimosa. Yum!
A tip for folks, subs, viewers on a tight budget( especially with the crisis going on) , you can use pure olive oil in place of extra virgin olive oil( evoo) for frying/baking & will work on this recipe. Difference = good evoo is from the 1st press of the olives & i save for salads & drizzling over entree' items with great flavor, pure olive oil is from the 2nd press of the olives & is still tasty, but not like evoo & is better used for frying/cooking etc... there is quite a big difference in price at the grocers as a good evoo is quite more costly than just pure olive oil. Definitely trying this, I wonder if you put the bacon and cheese on after the custard has been in the oven for 10 minutes or so it would tend to stay put more. I have whole milk and a few random cheeses I'll use with some ham.

Shortcuts to lower fat content: Kirkland crumbled bacon (1 Tbsp=7 grams=30 calories);multiply X 5. Finely chop whatever amount of sweet onion and saute until carmelized. Rehydrate dried shredded potatoes and squeeze all the water out. I only cook in cast iron since 3.5 years ago. Will probably make this in my @FinexCookware #10 skillet @CookWithUs. The shape of the Finex cookware makes serving perfectly equal portions much easier. Could use the @FieldCompany #8 or #10 too. Lots of choices. Time saving tip: Strain the potatoes in a colander first and then squeeze them in some paper towels to dry them.

I sometimes make quiche with no crust at all--less carbs/starch. But, this Hash Brown Crust looks great!

Using a potato ricer really helps get all the water out of potatoes, zucchini, spinach etc, so easy too! Try it! Thanks for a great recipe too!
