Seriously wonderful video! Thank you Elizabeth! I want to share that I used to think that zoodles were a magical food that could only be found in a restaurant but a few years ago I bought a spiralizer and now I make noodles out of almost every vegetable. Best $30 I have ever spent!

A quick tip: There are variances in the sweetness of honey; some flower sources provide more sugars in the resulting honey. If you aren't too keen on sweetness, try wildflower or buckwheat honey. If you have an aggressive sweet tooth, orange blossom or clover honey is far sweeter. What I love about this simple honey-mustard dressing recipe is not just the equal-parts measurements, but that it will keep a long time in the fridge. Actually, it will keep just as well OUT of the fridge! None of the ingredients will spoil if left out! Another way to introduce avocado into your salad without it turning brown is to mash it and mix it with mayonnaise. Mayonnaise contains lemon juice, which retards oxidation, but also the egg and oil in the mayo helps seal the avocado from the air. The mayo turns a pleasant green color and stays that way in the short term, and you still get the nutritional benefit of the avocado! Small criticism: If you put dressing in the bottom of the jar then drop cucumber chunks into the dressing, you are effectively making pickles, losing the freshness and some of the crispness of the cucumbers. -Better to seal the dressing in a separate small container, to add just before eating -2nd choice would be to follow the dressing with the quinoa; quinoa is famously unexciting (a flavor between oatmeal and brown rice), so dropping the quinoa into the dressing gives it flavor and helps carry the dressing throughout the salad when the jar is shaken or the bowl stirred. Following the quinoa with the bean layer (and even an added greens layer) would help separate the dressing from the vegetables so the vegetables would keep their individual flavors and crispness.
I would prefer to see the finished salad or at least be given a list of ingredients before I have to watch an entire video only to find out it’s not something I’d enjoy eating. It was somewhat annoying when you are talking to us but not looking at the camera

Remember to always, always shake your ACV before you pour, that way it’ll include the ‘mother’ which is why we all use ACV…
