- Let's get ready for Shabbat and Yom tov! Its still Passover, and I am preparing for the final days of Passover (called yom tov), as well as Shabbat, because it overlaps with the yom tov. I'll be taking you through my day, giving you a garden update, talking about our week of Passover / Pesach fun, and taking you along as I make Mafroum! Mafroum is a traditional North African dish made of meat and potatoes. This is one of my favorite Sephardi dishes. So delicious!

What’s your specialty dish that you like to make?
I like making bean burritos
I really love making a Brazilian fish stew w/ halibut, heart of palm, coconut milk, etc, during winter months. Love to make leek keftes and lamb tagine too. My husband also enjoys any pasta dish because he loves cheese... a lot. I call him The Mouse. 😂

I work in a commercial kitchen, and let me tell you, my boss would prefer “slow and safe” than “fast and dangerous.” You’re even slower if your dealing with a bad cut than if you are just steady.
I also have to say, you are one of my absolute favorite you tubers. You feel so homey, and sweet and are just the best thing to listen to while I unpack and put away the food deliveries.

Also before Pesach you had said u might have kashrutted ur dishwasher? What would that have entailed for you? Do u use it for dairy or meat or? U would kashrut it just for chametz?

Hello Barbara! Thank you so much for your kind words! To answer your question, if I did not write it in the description, then I don’t have it written down. For the holiday, though, I’m not sure when I’m going to be able to get to that video, so let me go ahead and tell you now. What you want to do is only put in three eggs and then let the dough sit for like an hour. That is much easier to shape into a braid. It’s still not gonna act like traditional dough, but you are able to form it into a braid.

Definitely saving this recipe! Its one of the more ethnic recipes I've seen that doesn't have cilantro OR cumin in it. I don't know why, but I'm one of those people who just can't eat cilantro because it tastes like I got hairspray in my mouth...and cumin has a little bit of that bitterness to me too. I always get so disappointed with a lot Israeli, Moroccan, or Persian recipes because they tend to contain one or both of these spices. So obviously, was super excited that this recipe had neither! Can't wait to try it!

Well, I made it and it was a success :) thank you so much for sharing this. I only substituted the cabbage with kale because it was what I had on hand and it was delicious. I froze it for two weeks and it reheated beautifully: the only thing I would suggest is to add a little bit of water and to be very gentle when stirring as a few of my mafroums disassembled during reheating. Anyway, really awesome dish Chana, thank you again from my family :)

You may already know this but here is a suggestion, if I may: to keep the cutting board from sliding about when working with a knife, place a damp cloth underneath it. It'll remain stationery. Mafroum looks absolutely delicious! I have just discovered that my family was Sephardi before a marriage took place and shifted to Ashkenazi. Now I am so torn between which of the two customs to follow.
You can always enjoy the food no matter what tradition you follow :)

It’s a North African dish that is made by Sephardic Jews :) There have been Jews in North Africa for centuries as it was a place many settled during the Spanish Inquisition.

Isn't that mixing dairy (egg whites) with meat? I am confused!
Great question! Eggs are not considered dairy or meat. We call them parve (which means not meat or dairy). I’m so fascinated to hear how many people consider eggs to be dairy! I never thought that even before I became Jewish!

Your cutting board is moving and that is dangerous. Put a wet paper towel underneath or that rubber grippy stuff that you use as drawer liners to secure the board so you don't hurt yourself.
Even a clean dish towel underneath your cutting board will keep it from slipping. Love all of your videos, and your pleasant personality.

I loved your coffee cup that said, ACTUALLY I CAN... that spoke to me, because I don't know if I can actually do anything I need to do. I know you are busy. But if we could talk somewhere in private. If not, I'm wondering if I can possibly convert. You seemed to just jump in and obey stuff. I don't understand the hair coverings and lots of stuff. I left christianity aboutv13 years ago, but I only found out jesus and the new testament was part of the pagen lies. I'm all alone. Like hubby kids family, don't even care about God. I've loved my creator since I first learned about him. I just watch RUclips rabbis and order books. But bottom line I'm clueless. I'm not like you, I'm not jumping into all the changes, because ivstill am not sure if I'm crazy or not. But gods commands, his sabbath are eternal..I know that. It makes me sick that people I love still go into a church..help!!!! Lol

Love you channel but right now you are driving me crazy! Dampen a towel & put it under your cutting board. You are a accident waiting to happen. One of the first things I learned when I started cooking. The other is always have sharp knives (less injuries).
