- Heavier planes can't fly at higher altitudes where the air is less dense. But the pilot of flight 708 should have known that.

The problem is not about passengers carrying too heavy luggage. The problem is greedy airline try to have extra cargo (courier service or air mail service) in their flights.
When you stall at 33.000 feet you have a lot of room to recover, just let it nose fall down keep controls neutral , keep wings level and if you like give it around 10 % of flaps to give it more bite as at that level your TAS will be under 300 Knots . Learned this stuff in a Cessna 150 when we practiced stalls at 6000 feet and had plenty of room to recover , and if it fell off on one wing usually the left stand on the rudder and level the plane while pushing the elevator down to prevent a spin . Why did this guy not know how to recover?
A combination of factors caused the capt to misdiagnose the stall as engine failure. The FO recognized the stall and verbalized it several times but being half the age of the captain he was likely too timid to intervene
A known vulnerability of the MD-82 autopilot also contributed as it would overly compensate with AOA to the point of near stall without disconnecting and a sudden updraft sent them into a stall but the captain made it worse. When the engines rolled back he became fixated on engine failure

it really depends on the aircraft; some you have to do nothing others you need to point the nose down. There is a reason why commercial airlines have to certify people to fly each aircraft. He may have not been trained to what to do

What am I missing here, the aircraft lost the power to fly at 33k ft when they turned on the anti ice, and stalled. But they had at least 32k ft to recover. Once in denser air the AC should have been controllable since they had flown through it on the way up with no problems. So what are we not being told?

MD-82 commonly seen on American Airlines Newark Airport to Dallas Fort Worth route and I'm not sure if you turn on the anti-icing system on a CFM-56-5A the engine used on an Airbus A320 would caused it to crash like this MD-82 which had a JT8 engine

I am pretty sure they were supposed to be told about those things _This is how much the plane weights and this is altitude we want you to fly_ No guess work involved.
