Badger. You needed to put on a strip of foam seal plate before you screwed down the sill plate to the stone or concrete. This is to stop the wood from wicking up moisture through the stone. This is why all the old houses in UK and everywhere that builds with stone gets damp!! Concrete floors need a barrier to stop the damp from entering the house. Put your hand on the big stones and feel how cold and damp they feel. You need to get this right now or you will have a damp house just like back home. Good luck❤
I’m in the US and our 1926 cottage is now floating on the concrete footing in one corner because of this very reason. Not too much damp issues since we have a large ventilated crawl space underneath the wood construction but definitely a shifting house because the damp has rotted out the sill plate. 😢

I see a lot of comments about a damp course protection... now water do not travel up granite so I wouldnt worry too much just make sure the roof is water tight ;-) lol.. I am Norwegian ( living in Belgium for more than 20 years and with a Portuguese madam) so through the years I have gotten to know the country a littlebit. Do you feel confident that a wooden structure will last the test of time? Thinking about the wood eating bugs of course.

To do the concrete to join wood to granite why not make a former using 3 wood planks and fill from the top leave to set then join your studs to that just a thought

Not sure if you are putting any windows in the walls. We had a green oak garden building built and added inset non opening full height double glazed units in 2 walls. The oak framers sat the glass on a flexible membrane and added kiln dried oak cappings to the exterior oak to ensure no water ingress when the green oak dried and shrank. It looks great and is completely weather proof. It would look lovely and give you a view in all directions. Knowing how you like to repurpose things, a guy renovating Chateau Montmagnier went to a local place that sold second hand upvc windows and doors which he bought for peanuts, took the sealed units out then made new frames in wood.❤ Great progress.

So yes badger is a plumber(his main trade) but he had his own building company for years before we left so definitely had building experience, which is amazing now we get to do our own project ☺️ I have been been busy being mum for years.. yes super excited about the water turbine we have the last piece so will be fitted soon I hope 🤞🏼

You are mixing morter not concrete, concrete contains gravel or granit chips, morter is sand and cement.
I always get it wrong 😅
