Pam here….My husband was in the hospital several times last summer/fall and I would come home, pick my tomatoes, washe them off, the ripest ones got put on trays to roast, and as the others ripened i washed and put in gallons freezer bags whole. Then they thawed I coule pull the skins off and cook up. No time for canning and i still got some tomatoes for the season.
I had no idea that the skins could be left on! I’d love to see more “lazy type” tips. As a person with chronic illnesses I truly welcome the simple approach. ❤
Something else to consider, the Ball Canning Company gives the directions to freeze in their canning jars. They say the main reason jars break is because you used regular mouth jars. They recommend only using wide mouth jars and leaving a 1 inch head space. The only time I ever had a jar break was when I used a regular mouth jar. I can fill the wide mouth with the recommended 1 inch head space and have never had issues.

I like that too. I hate that in romania some homemakers pick at you if you don't do it their way. For example: i make my chicken soup with lots of carcasses and chicken feet anf necks for a gelatinous and rich broth. And i add veggies like onion, onion skin, garlic, bay leaf, leek, carrots, parsnip, celery and because of that, my broth is not clear. I am okay with that but a lot of women would say: your broth is not clear. 😅I am romanian by the way.

You never stop amazing me. I am twice your age as you know, and I did all the stuff too but I still learn a lot from you. And that is how it should be really. Amber, I love this idea! I did this a few years ago just because I didn't know how to can. And I thought: why not freeze it? It should work! And it worked great! I would def do more of this if I had more freezer space.
I think keeping the lids loose until the sauce is frozen and then when it is fully frozen tighten the lids will also prevent breaking. I think freezing it with the lids closed will still increase pressure because of the liquid expanding.
I also have histamine intolerance! It sucks so much 😢 I was talking to friends and they were talking about how they would love to be able to eat anything and not gain weight. I was: I want to be able to eat anything wo it hurting me! The weight thing is often something we can balance, but being sensitive, intolerant or allergic to food sucks so much

I either blend or leave as is when I’m about to use it and then add everything else I might need depending on the recipe. This year I did the same with ratatouille:) Nothing beats summer tomato flavours! My only problem is running out of freezer space!
I appricate this video and many times need something fast and easy due to lack of time. I much rather save my harvest this way than loose it because I felt stress to do something else I don’t have time for 🙏. Blessings

Another way to cushion jars from bumping is to use rubber bands. If you get any products that come with rubber bands save them to use on your jars. ❤

You can add more sauce if the jars are straight sided rather than having the shoulders. There is more room for expansion.

I hate fussiness. I make mashed potatoes with the skins. I love that there’s no peeling in this process.
