I discovered your channel yesterday and had been craving this since last night. I made it today for lunch! unfortunately I didn't have any red wine in the house and was too impatient to wait so tried to improvise by using some pomegranate molasses and apple cider vinegar for the acidity, it was really tasty especially accompanied with buttery mash! For a meat version, I have cooked a pork shoulder in beer and beef broth with apple and oignon. I mixed the pork with his broth with your recipe, replacing the wine and chicken broth by the pork's broth recipe, added the others ingredients. Its is very delicious and nutritious food..For a variation.

For another meat version, I ve made the ragout with green cabbage and added apple to the recipe and replaced the wine by a beer. Once done, I grilled kebab with a sip of red wine, and topped with orange cheese. I mixed with the ragout With a glass of red wine. 😋
hello ! this looks so yummy but is it possible to substitute the red wine by something else and the sugar by a sweeter? I am trying to reduce the amount of calories, with a non sticking pan I can get rid of the oil ... and how can I give it consistency without the flour ? again of a matter of calories .... thank you in advance !
Hey mario, you could substitute the red wine with some red grape juice and a teaspoon of vinegar. I wouldn’t recommend using sweetener, just remove the sugar. Removing the oil should be fine - I’d substitute water to soften the vegetables. Hope this helps
I got my first order from Imperfect Produce. I got a large red cabbage just for fun, and a lb of lamb. The lamb is between a shoulder and a shank. So I’ll brown those in 1 1/2 in chunks. I’m thinking I can use the aromatics, tomato, liquids and spices to braise the the lamb for an hour.. then add the cabbage. Is this a vegan channel? Not sure but you seem like you’d know anyway.
Hey hey, I would recommend adding the lamb in with everything, cabbage included, and braising for at least an hour. It won’t harm the dish to braise longer than that if needed. Yes this is a vegan channel but I was omni before and always happy to help with cooking questions.

Relying on the veg to feed a fam of 4, especially for my two teenage girls who have no interest in lamb or cabbage. I saw that red cabbage has iron and of course lamb does too. There is a real need for iron in the diet once a month for women and girls. I’ve got to bring my A game..
I made it for dinner tonight and added all of the cabbage as you suggested. Still had wonderful texture even after cooking for an hour. The lamb was already cut into pretty small prices which I wasn’t expecting. It was delish and surprisingly rich. So glad I only had that 1lb of lamb. Went so well with mashed potatoes but I really loved it with the baguette. So so good, thanks for the inspiration!
Hmm, real tricky as this is a ragu so tomatoes are pretty essential. However you could try substituting tomatoes red peppers. Use about 4 large peppers seeds and stem removed and the blended into a paste

You can use a mixture of red grape juice and Balsamic Vinegar. For the 180ml of red wine use 160ml of red grape juice and a tablespoon of vinegar.

Thickens the sauce. You can omit if you want, but I would recommend for a really smooth sauce
