There would also be a A/D (analog to digital) converter to measure the movement of the hammer under the key to emulate the reaction of touch (how hard) and speed. This all feeds the brain to provide a realistic acoustic response.
This is what happens when you aren’t responsible for developing all aspects of your keybed and outsource to others manufacturers. The Italians are also passionate about what they do and make.
At home I've got a Kawai VPC1 controlling Pianoteq playing through two Yamaha HS8 monitors. Best digital piano playing experience I've ever had I think. Pianoteq is the only piece I'm not sure about. It's pretty good, but I wonder if I'd like Keyscape better. I play jazz and pop, not classical music.
Nowadays Fatar is the best keybed manufacturer in the world used by Yamaha, Roland, and Korg where in the past each company made their own keybed. At one point Korg use Yamaha keybed in the 90's. The best of them all, Native Instruments Kontrol S88
Did they (finally...!) insert a "detuning system". A reset button to go for perfect tuning (and choises for also Yamaha tuning). After the reset button, the digital piano has slowly to detune. (but never in the same way of course!) so that you get all the time different harmonies like a normal piano. (I likely my upright Feurich a little bit detuned!) If the piano goes to wild, press the reset button. Why o why did they never do this...?
The keys are too short on stage pianos and tire the fingers, the key lever is longer on a grand piano and especially on the black keys you can notice the difference.
7 minutes to say, some electronics are put in a box, keys & knobs are added, then you have a keyboard. That's the level of detail your video shows. And I didn't see "you" build a keyboard. And you're an "educator"?

Really need a full length key to get it nearer to an accoustic, like the Kawai mp11se or VPC-1. Folded actions can only get so far.
few jears ago I was able to learn about VIVO S7/S9 and was very impressed. If I have to, my next choice would be a Dexibell

Pianote should bring Lisa Witt to the 'Boardwalk Hall' at Atlantic City to experiencing the world largest pipe organ(Midmer-Losh) in the world.
The keys/keybed is not made by dexibell its a FATAR/Studioilogic product tp400w for the piano's tp80 for the organs
