Dang, Jack. That looked amazing. I used to work part time in a Bojangle's here. I loved their dirty rice. Zatarain's has a boxed side dish which is really good with some sausage added. Your version looks to be so much better. I really dig that you've not only invited the post commander for Ft. Dix to join you, but also his family, and are involving his children in the process. This is a monumental thing in my eyes. Everybody's gotta eat, but making things really taste good can be challenging. Showing these kids how and letting them benefit from your expertise earns me big-time kudos from me. As I've said before, God love ya and continue to bless you and yours. Peace.

love the recipe. it's so nice those young people get to experience that with you . shows great patience not a big fan of chicken livers . as i'm sure you already know are an integral part of some dirty rice . i tried it once with the livers and gizzards . then , without the gizzards . for my money ...don't think the gizzards made much difference , and they are tedious to clean , without much meat for your efforts. i liked it with the livers (pureed) did the oven finish technique ... worked great. thanks again , jack

I swear, he puts the same ingredients in everything he makes and then burns them, no matter what the dish is. He seems like a nice fellow, but as a cook, he is one of the most limited one trick pony that I have ever seen. RIP
Okay, couple things. Real Cajuns don’t cook dirty rice. We cook Rice Dressing. And New Orleans is Creole, not Cajun. I would have tasted what you just cooked but that wasn’t rice dressing or”dirty rice”. That was more of a jambalaya

It ain’t got nothing to do with if a person descends from Acadians are not, it’s regional and according to the culture of the region. And yes, the culture in New Orleans is creole, but Cajuns settled on the Westbank across the river from the the main part of the city and creole culture of the greater New Orleans area includes Cajun culture. Creole culture in the area is a mixture of all the people that settled the area. French, Spanish, German, Acadian/Cajun, African, Italian, Irish, American Indian, Caribbean and the Americans from the South, so Cajun is included in creole culture of the area of greater New Orleans.

im a pretty decent home cook but didnt know much on what exactly dirty rice was besides spicy rice with some veggies, looks like a real versatile recipe like a chili, throw in whatever, mushrooms, shrimp, sub beef for pork, lots of possibilities,

I'm from New Orleans and I've never seen dirty rice with vegetables mixed in..I've only seen it made with ground meat/pork and a green onion slurry..
