these videos have such a crazy 90s vibe around it - no phones, no skinny hipsters, no coffees and brownies, just straight up greasy cooking in the kitchen in the back of the restaurant. amazing!
My grandmother was forced to raise 3 young daughters, my mother one of them, alone during the depression when my rat bastid grandpa ran off with the neighborhood trollop. She made dozens of meals with a pound of ground beef that would feed her family of four. She would flour hamburger patties, fry them and make a cream gravy and serve it with mashed potatoes and pulled biscuits. This is damn near her recipe. Thank you for sharing. You never disappoint, Daddy Jack!
Its nice to see what an authentic chef looks like on Camera, not some food network nonsense. I respect what you do sir, great work. Nothing brings people together like good food. Period.
OMG. What a great childhood memory- many years ago. My mom (RIP) was a great cook. She did so many of your recipes. I am waiting on chicken, noodles and dumplings.
Man this breaks my f****** heart. I'm going through and watching all of your videos all over again just in case I missed one. Rest in peace legend. You probably don't even know how many people You healed with Just your food.❤❤❤❤
Just found this channel and Daddy Jack made a MEAN Poor Man's Chicken Fried Steak! Just made it for the first time and will never look back. Time to explore all of his recipe's! RIP Daddy Jack
@Joker Toker wow strong counter. I see your semantics are as good as your knowledge about food, chefs and culinary things. I suppose that is due to your extra chromosomes.
I grew up here in the south eating "fried steak" this way, my Mom always used hamburger meat instead of cubed steak which is usually tougher. It was so good!
Love these vids. This guy is obviously the type of man who wants to care for everyone around him but cant take care of himself. I notice they havent uploaded in a couple years. Wouldnt be surprised if Jack is dead by now. If you're still the same man do what you can to get healthy. I've seen what happens first hand and we need men like you to keep living so get healthy man.
God bless this guy rest in peace. I just ran into his tap on RUclips. I like his cooking old-school cooking when I was growing up. I still do it now and then this is how you cook
Never could handle HOT food or real spicy food but I would like to try what you make just once. Love top watch you make it all look so easy. I cook for me and my great grand kids. No where as good as you. Thanks for great videos.
this man, and this channel, is the epitome of a LINE COOK. there is zero bullshit, pretense, or fanciness going on here and yet the man is absolutely cooking his ass off. it's hard to explain how so many subtle, easy to fuck up things, are just...done right. i'd bet my left leg that this man could handle standing room only dinner service for his entire restaurant by himself and every single dish would be delicious, seasoned correctly, and would come out in no time flat.
I made this yesterday and cut it in half, took half to eat while watching tv when I came back for seconds the other half was gone. Thank you chef for sharing the recipe.
Thank you for the video. That spatula looks exactly like mine. I inherited it from my grandpa and he used it in ww2 on a navy ship. It's just funny searching for a meal he used to make me I see the one cooking utensil I leave on the counter 24 7 to remind me of him.
A wise person said they didn't need a Michelin star to know they are good but so everyone k ow they are good the chef knows what he's doing and capable of no title will ever replace experience
I'm binging on these and your Cooking with the Blues videos. This is a nice simple recipe that I'll need to try next weekend. I live in Austin and usually make my grilled hamburgers with jalapenos in the meat. Glad I found your channels. I learn something from all these videos. I used to only dip meat in egg + flour once, but I'll try it twice.
I'm watching this May 7th, 2024, and he said "Mother's Day is comin' up this Sunday," and I looked at the calendar. YEP! It's this Sunday, May 12th, 2024. Dude just prevented me from being in the Dog House this weekend from beyond the grave! lol RIP, fine sir! Side note: I would love to read his biography. He mentions learning thing from folks all over the place. I think it would be an interesting read!
My mom used to chicken fry my steak out of hamburger too! This hits close to home, Old School style. Glad to see you are not afraid to go with it, what is good.
Never trust a skinny chef my executive chef Anthoney was a man of great food and flavors he was a big man and he could cook one of the best lines from a movie that has to do with cooking came from the professional it's got to be alive you're cooking the flavor out of it it's got to be alive
RIP big man... the flames, the food, the talent.... all amazing ! You are loved and missed.
Not surprised, must have been a really unhealthy eater

At almost 50 I'm starting to really appreciate the skills of guys in the kitchens that have fed my ass for so many years.
Jack doesn’t measure anything......he just knows! Amazing!
Just like an Asian mama

We miss you Jack. Thanks for all the great food and memories. So talented and underrated. The great ones always leave too soon.
There is also a meat cuber named "Fast Cutlet Maker V2" that flattens the flesh and form clear cube pattern on it. Its popular in Germany.
This is watching a man who loved to cook. And the folks who loved him because he was real.
RIP Jack!!! I am sorry I never made it to the restaurant before you passed.
Every recipe starts with burnt butter and garlic...delicious
Rep Polska I love how he taste the sauce with a flower dredged finger tip, bet that’s tasted great! LOL
Burnt butter is hideous and an indicator of very poor technique..
Pete Schneider stop the know it all crap, please

Just a plain hell of a chef, to watch, once you start watching, have to watch to the very end, R.I.P Daddy Jack.
I'm a chef and I vouch for this guy he knows what's up he cooks just like I do and I'm from Texas! #props
no culinary degree i suppose then?
@Joker Toker That is total BS. In fact most of the top chefs are not fat at all.
@Joker Toker You make the relation fat chef=knows about food. That is just untrue,as there are hardly any fat top chefs. Clear enough?
@Joker Toker What do you mean by your parents were siblings?

It's really not a problem. A well-made rue doesn't clump. And it takes a lot to burn it.
I love watching these. I'm on a very strict diet and I can't eat that way but I bet everyone who eats at this restaurant is very happy
