this reminds me of my dad and his pals from when i was a kid back in the day. even the sound of the exhaust fan reminds me of my dad in his restaurant. he died in 2021. i miss him. i come here from time to time to weirdly remember the world of his time. people are different now and i miss the easy way everyone used to just shoot the breeze like this

When I ate the Popeye's chicken sandwich, the fried chicken part had such a light and crispy batter that I've never had before. I figured it's that batter that makes the sandwich. I wonder if it's a combo of corn starch and flour or something cuz it wasn't just a flour batter. You ought to try it and let us know. 😊
Worth brining the chicken in seasoned buttermilk for a day before doing egg wash and flour dredge, will help the crispy outside expand and get that southern cooking flavor.
