A comment on the crew size... I happen to work on a passenger ship that is almost the same length (if possibly a bit taller) than the Consular-class. Our crew compliment, as mandated by the US Coast Guard, consists of 1 Captain, 1 First Mate, 1 Engineer, and 5 Deckhands. This for a ship that docks every night, if we were at "sea" for multiple days we would require twice the number (2 Captians, ect) for a minimum of 16 crew members. It also does not include our galley crew or the entertainers (about 50~60) nor our passenger areas (seats for 600), only the crew needed to pilot the vessel, maintain watches, and respond to emergencies. You mentioned the Consular having roughly 9 crew members. Aside from lacking the manpower to have billets filled around-the-clock, this seems reasonable for a non-combat-oriented passenger vessel... which is what it was (perhaps naively) designed to be.
I would also think that the likely use of highly advanced autopilot that most of these ships had at the time would also play a role in such a low number of crew

Problem wasn't that it was unarmed. Problem was that it was used for combat at all. Republic should have dedicated escorts to protect them and generally improve it survivability (good engines, hyperdrive and shield needed for VIP protection).

Well in it's defense .... It's was the lightly armored diplomatic version, sitting in a docking bay with it's shields OFF .... Not really expecting to be attacked
To be fair, they weren't expecting to be attacked. They had been permitted to land, and the shields were down. Just before it was destroyed, the pilots frantically tried to raise shields, just not in time to prevent themselves from being blown up.

How about 10 flaws of the light saber? Think about it...flames, bullets, the physics of steam explosions. These things are as deadly to the user as the victim. Not that I will ever give you the odds....
Lightsaber was ceremonial weapon, what despite that was exceptionally good in specific uses. But no one beside specific type of crazy would use it in normal combat.

I think it depends mostly on period, but during regin of Palpatine class 2 hyperdrives were most prominent in larger vessels (both military and civilian) due to cost/effect ratio, especially on freighters, as additional maintenance could kill off profit margin - there were large ships with faster hyperdrives (Acclamator-class with recordbraking 0,6), but their drives required costly maintenance. But if we are talking about light freighters and other light vessels, then costs of acqiring and maintenance would be not as prohibitive, so couriers (both legal and illegal) could use to increase their profits, as they could take more delivery tasks. As for fighters, it wasn't common to use hyperdrives on them, as most of them were relatively light frames, where outfiting any hyperdrive was impossible due to lack of space/would require to make use of hyperdrive rings/would significantly increase cost of manufacturing. Another problem for fighters was size and cost of full-blown nav computer, which further increased costs or forced designers to include an astromech droid in their design. In the end, when starfighters began to have hyperdrive as deafult pack, they had class 1, because it was already developed and produced Wow, now that I read what I wrote, I see a lot of nerdiness in me
One can’t forget that the Republic was a bureaucratic government. They likely purchased things on a bid system. This ship was almost certainly CEC’s low bid design.

Be careful with your C's and R's... The Consular-class was designated C-70 'Charger' in the Clone Wars. The CR-70 was a totally different ship, and the predecessor to the CR-90.
Let’s be real, the Galactic procurement department probably purchase a large fleet of these things right before a recession, and then every time someone wanted to replace them, they instead just put it through an upgrade programs, which over the airframes lifespan, likely cost 10x more than the craft fleet was originally purchased for.

The fact that the Republic was still using such rustbuckets was a sign of just how out of touch it had become, to the point that they can barely maintain something so basic as keeping their own government vehicles in good shape. If they can't even manage that, then they're certainly not up to effectively governing a galactic republic. That opening scene is kind of amazing, looking back on it. In less than one minute, you get a clear understanding of what's going on, just by looking at the contrast between the CR70 and the Lucrehulk it lands in. The Republic ship is small, kind of battered, and unarmed, with visibly faded paint and blackened grunge around the engine nozzles. The Lucrehulk, by comparison, looks sharp, polished, and factory-fresh. The hangar floors are shined up, like they have the resources to make even their vehicle maintenance areas smell of Pine Sol and fresh paint. The overall impression you get is that the Jedi are one of the last bits of the Republic that are still effective, but overall, the galaxy is slipping out of its control and into the hands of rapacious local powers. Every would-be empire builder, from crime bosses to Space East India Companies, can run pretty much rampant wherever they like, and the most the Republic can do about it is send a couple guys in a rusted hoopty ship to ask them to tone it down.
Honestly for a Star Wars tabletop game giving players a rundown version of the Civilian/Diplomat Consular-class Cruiser could be actually fairly balanced and make some sense. It can be upgraded to the light armed package it had during the Clone Wars if they wanted and add in said drawbacks listed in the video along with the fact that you specify its rundown it will work but players would probably want to trade it in for something better armed, armored, shielded, faster, and easier for a crew to manage. You tease them that they are getting an Old Cruiser to start with and you have them gather parts and sorce items needed for this thing o escape or just acquire but its a Rundown Consular-class and most ships can still out run and out jump you and you have little to no armament or armor based on what they do with it. A nice mediocre at best starter craft for a player group of about 4-6 that can accommodate NPC companions if they get some. Even if they upgrade and retro-fit it to be more like the Clone Wars Combat model it is still weak and their are better options even in the Galactic Republic era for group that size let alone During-Post Empire.

Imagine if the Judicials’ approach to being given the military’s duties was to absorb the military and its ships and such. And Palpatine and the Sith, in their arrogance, though removing the military was literal. The shock at the Republic having both a massive military pretending to be police AND the clone army and its fleets. Or the Judicials responding to the destruction of that Consular by the Naboo blockade by sending a few star dreadnoughts to get real proportional.
Let's just say this if a Dreadnought from 4000 years in the past can fit spaciously inside the hangar of a ship for Thousand Years in the future but then that ship has got some flaws
The biggest problem as you said it was made for civies not military so it can sure be strapped with turbo lasers and improved sheild but all is then is a glass cannon if they did this but told then to switch out the civilian part to a military version and more armour then it would be so bad

A senator character I ran in a star wars rp, and the backbone of the fleet I ended up building because of limitations on what even a rich af senator could buy. The charger c70 retrofit (not to be confused with the cr70) is actually a very good ship
The UNSC either Post Covenant or Pre Covenant war (Halo) vs the Terran Dominion (Starcraft).
They are all valid complaints...that said, I'd still take one. Or a CR-90. Most any starship, honestly. I'm not too picky.

The actual model works well with combat modifications, and has a very good acceleraton and speed.
Theory: the CEC combined the best qualities of the Consular class with the Hammerhead corvette.

Consider this: since the Consular class is designed as a civilian vessel, it doesn't have any military grade systems on it.
