Behind the Counter at a Local Japanese Miso Ramen Restaurant

    I’m going behind the counter at a local family owned Japanese Ramen shop, Kakitagawa Hibari. This hole in the wall, through the corridor, would never know it even existed, hidden Japanese ramen shop is exactly why I love doing these videos. The shop was originally opened in Shizuoka and relocated to Ebisu at the start of 2021. The shop had a fairly quiet start but quickly picked up a reputation and these days more often than not has a line out the door. The shop uses a special blend of 5 unique kinds of miso paying careful attention to not add heat until just before combining it with the soup to preserve the miso’s flavor, a distinct saltiness paired perfectly with the sweetness from the pork back fat creating their signature bowl of ramen. The shop uses noodles from Kaikarou, a specialized Asakusa based noodle producer. The noodles itself are made from a blend of 2 types of flour and Tapioca to create its characteristic spring texture and sweetness, pairing perfectly with the shop’s strong and rich miso soup.

    Little places like that really are neighbourhood gems. I think that, especially in big cities like Tokyo, visitors from overseas tend to miss out on these family-run places in favour of the more accessible-looking chain restaurants. (But they are really missing out!)

      @@missplainjane3905 I personally not, but my friend who visited tokyo, wasn't allowed to enter some izakayas. They even had a "foreigners aren't allowed in" sign outside the entrance. My friend and her husband thought it was because of the language barrier, and despite them knowing very decent japanese, they weren't allowed in.
      Of course they didn't have the same experience in every restaurant/bar but it sure left a bitter feeling

    There is something incredibly beautiful about a simple ramen shop run by a husband and a wife alongside a young apprentice. Feel like stuff like this can't be seen in the west anymore (or at least not in my country).

      No one seems to take on apprentices like this anymore, and companies NDA recipes and don't want anyone to use them, especially to open what would be a competing business even if they aren't near eachother.

      it's normal in asia that ramen shop manage by family members, and will continue on to their generations...an apprentice, is rarely happen...if so then the taste will be slightly different...

    I still want to see a day in the life of a Japanese reporter/journalist. Japanese culture is so structured and so polite, I just can't imagine a Japanese journalist aggressively going after a story or chasing down a source.

      I agree with you; I would love to see this as well. In the meantime, have you read the book “Tokyo Vice” or watched the HBO mini-series of the same title? I’m sure it’s exaggerated for dramatic purposes, but still very interesting.

    That's one of the most freshly made ramen broth I've ever seen and the staff are amazing. Love the comedian guy! lol And the presentation is gorgeous! Would definitely consider going here if I ever do visit Tokyo for ramen.

    A few things I liked about this:
    - The owners and workers seems very intimate (i hope the right word) to each other that they do tell some banters about each other. IMO, signs of a great sync when the busy hour comes in.
    - Various dishes are just super tasty just by looking on a screen, and when the customers also praise the dishes, you know its high quality.
    - Very clean environment overall. Despite its rather small space, They somehow made it so that its very homey and cozy to eat inside.
    - Staffs seems friendly to chat with, maybe while eating you get to chat with them if they have the leeway while cooking. (lol)
    If i ever get the chance to get to Japan, I'd definitely try this place out!

    Yeah I've always said before, if you want really good food find the "hole in the wall" back alley ones. Chances are it'll be better than a fine dining resturant. Mainly because places like that typically pass recipes done generation to generation. Thus you have multiple generations of men/women constantly one upping or improving recipes their parents passed to them.

    the chef employed is very cool!, it's rare to see that attitude in Japanese, loved it, I would definitely eat in that restaurant

    to answer his question, yes there are host clubs overseas. Here in Vancouver they are usually in the back of korean/japanese resteraunts all over granville street. I know girls who were clearing 20k a month working at a host club here in Vancouver.

    Absolutely my favorite meal while in Japan…I tend to enjoy the simpler pleasures rather than more costly extravagant meals…a bowl of good ramen and side of gyoza equals a satisfying meal in my book….thanks Paolo

    his most popular menu item is special miso ramen
    his wife liked the miso ramen of the place where he trained at (she very rarely eats ramen before meeting him)
    his original plan was to include said miso ramen even though it wasnt trendy
