I always thought that Microsoft uses this technique of “surprise convenience”. Which basically means they’re making things that you would normally think wouldn’t work, work. Such as saying you can’t upgrade after a certain date, but still being able to. Or us thinking that getting a newer windows for free would be impossible but actually being possible. This helps create a positive brand image in your brain. Either that or they just wanted to rush people to upgrade to a more secure version of windows.

Windows 10/11 collects more data on you. Thats why they want people to upgrade. They would probably say it's for security and to allow people to have a supported OS since 7 is no longer supported.

There are huge brands such as ASUS, Acer, Lenovo and HP. Yes, in an offline retail store you probably won't find those, especially on display. But they still exist. My guess is it's because companies are buying them. Most companies either have a business Windows license, or use Linux, meaning when buying in bulk they would throw away a lot of money on unused licenses. So I don't really think that laptops without preinstalled OS are going anywhere soon

It's no normal operating system, you still have to learn a lot about how to use the terminal, get used to the desktop environment (unless your going from windows to kde), and also be able to troubleshoot problems you may have by yourself. Oh yeah, don't even get me started on gaming on linux, while it's not as difficult as before, still the average person who uses windows will probably have a super hard time learning how to set things like wine, proton, lutris, bottles, etc etc up.
