Great video, per usual - for this bumper, would you still need a winch plate? Or is it ready to mount a winch immediately?

Nope. Looks like the winch holes are pre drilled

No need to add a winch plate! This has 4.5x10" standard mounting points for up to a 12Klb winch! -Merideth
