    I always stir just the sugar and cocoa together first because the sugar breaks up the lumps in the cocoa. Then, when I stir in the milk there are no lumps to contend with. It also works the same way with recipes like homemade pudding or pie filling that call for cornstarch.

    A woman used to bring this fudge into work for us. I asked her how she got it sugary (gradually). She said stirring it a lot. I actually like it better that way. I haven’t made this recipe in years. And found this video, which reminded me of that. Can’t wait to make it! ❤

    What a lovely recipe. My Gramma use to make fudge like this but I never knew what her ingredients were. It usually was made by the time all of us arrived. She always like to have things almost done by the time all of her family came over. I miss my gramma, but I love your recipe. Thank you so much

      My nanny made this too. She added chopped pecans as the last ingredient. Always loved it and her!

    Mix the sugar and cocoa together before adding the milk. This prevents those lumps of cocoa from chunking up.

      When my nana discovered crunchy peanut butter she would use that if she was out of walnuts. My sister learned how to make it get grainy for me bc I love that grainy texture! Everyone else gets the good version.

    Thank you for this video recipe! I was just asked if I had the recipe my dad used when he made his famous fudge and at first I assumed there would be no recipe...then I realized that he would have used the Hershey's coco and would follow the ingredient amounts on the can... He never used a thermometer but I always loved watching when he could form the ball of fudge in the little cup of water. Thanks again... I have passed this video on to my family members that were seeking my dad's recipe.

    This is the best fudge recipe ever. I first remember my grandmother making it back in the 70’s. Now I’m the one that makes it for the family. Never a Christmas without it. I like to make the peanut butter version without nuts, and a non peanut butter version with black walnuts. The black walnut version tastes like old timey fudge to me. 🤍

    I whisk together the cocoa and sugar first and I put in warm milk so it starts to dissolve everything fast. When I first tried making chocolate no bake cookies it started to set too fast. I think I cooked it too long. SO when I added the oats it wanted to set in the pan. I kept stirring and stirring with a wooden spoon. Since it was drying too fast to form cookies, I just decided to make no bake cookie granola LOL. Everyone loved it and we had bowls of ice cream and used that as a topping.

    Mom mom used to make this fudge and we would have a big bowl of buttered, salted popcorn. You're correct - they really go together. So good!

    We had the same tradition of watching a movie, and my mom would say If you make the popcorn I'll make the fudge. I was always good at making the Popcorn and I also learned how to make her fudge. So I do that now. She passed away years ago but I still make that. I like to make my fudge the way you made it.

      Kidspastor7, we had the same tradition! Usually on Friday night, we'd have fudge and popcorn, or my dad would bring home peanuts and redhots which would be mixed together in a large bowl.

    This recipe sounds like the one I grew up on, back in the 60’s. My older cousin would come over and make it for me. I do remember making it as I got older but don’t remember the ingredients. I remember dropping the fudge in cold water. Love the added peanut butter.

    My dad made the fudge recipe off the back of the Hershey's cocoa can. He added black walnuts to it that we picked up from the farm. The last time I tasted it was 1989. I cannot find even a picture of that Hershey's can...and yes, I remember him talking about the softball stage

      The Hershey's Cocoa is still available at most groceries in the Chicago area and I just checked the one in my pantry; the fudge recipe wasn't on it, but I am sure it would be on the Hershey's website.

    I remember making this as a kid, and I liked it because it wasn't real creamy but it was 'hard' fudge. We didn't have a candy thermometer and I don't remember doing the watch drop test. I remember we stirred it until it had a 'sheen' to it, and also it was starting to crystalize. Maybe we did it 'wrong' but that was how we liked it. 'Hard' not soft and creamy.

    I love to make a batch with special dark and dried cherries. Very good. I made one batch with a little cinnamon and dried habeñero for a Mexican chocolate fudge.

    I noticed you didn't allow it to cool to 110 degrees and poured while hot. I must say this goes against the standard tradition. Yet yours came out perfect! I will try it this way.
    To date I have invented many forms of new concrete trying to make this stuff.

      I have never seen regular milk used...its usually evaporated milk and another cup pf sugar and a full stick of butter. I think the whole recipe is off!

    So no just dumping in butter and letting the mixture stay undisturbed through a cool-down period? I seem to remember that, and then having to beat the heck out of it, and then as soon as it lost its glossy look, having to quickly - and I mean quickly - get it into a buttered pan. This method sure seems much better. I'm going to have to give this one a try.

      This recipe was on the box of hershey's cocoa for a lot of years, I still have the recipe and have made more fudge then I can count over the years, but now as a senior citizen I can't cook like I use to and I do miss it.

    I'm 71 years old and this is FUDGE! Mom made it every few weeks and my dad tried a few times but it always ended up as thick chocolate sauce we put on ice cream. My favorite way is to make it grainy..I love that grainy texture!!

    I have been making this since I was a little girl as well! Boiled sugar fudge like chocolate and penuche and any other flavor to me is real fudge. Marshmallow fluff fudge is not fudge to me nor is a bag of chocolate chips and a can of sweetened condensed milk that has to stay refrigerated because it's not stable at room temperature. Christmas got a late start this year because I have been sick but what the fudge and goodies begin!! :-)

      AMEN!! MARSHMALLOW OR CONDENSED MILK IS NOT FUDGE!!! I remember getting to the soft ball stage in cold water and then removing from heat and beating the heck out of it until ALMOST dull. By the time it gets dull it would set up too late to dish up. You had a rock of fudge in your pan! Almost dull I would Then quickly transfer to a buttered dish and spread. OOOO! Nothing can ever compare to this - except maybe the ORIGINAL Mackinaw Island fudge or Murdocks fudge!!

    Oh my husband forever since I've made homemade fudge I'm 77 and I like your recipe but I did change it a little bit I used a third cup of cocoa and I use three cups of sugar that's where it's different but it's just it turned out great.

      You can also make no bake cookies with h this recipe. All ya do is add about a cup n a half of instant oats instead of nuts.

    I used to make chocolate fudge years ago but lately just peanut butter fudge which everyone loves. This is the first recipe Ive seen where chocolate has peanut butter added ,,, would think it make it creamier,,, might be worth a try

    Just a hint. Combine the cocoa & sugar before adding milk. Anytime I bake with cocoa I always combine it thoroughly with the main other dry ingredient.

    We didn’t have such a thing as a candy thermometer… so we always dropped some in ice water to tell when it was done. Never added peanut butter. Just black walnuts gathered and shelled.

    *This recipe has been around about as long as there's been cocoa powder and a pot to boil sugar in. My parents made this when I was a young boy and I'm 62 now. You can control the consistency by how much you stir it as it's boiling. It's pretty good with crushed peppermint candy canes in it too... I would caution AGAINST REACHING OVER A BOILING POT OF SUGAR, sitting on top of a hot plate, like she does @**3:06**.*

    Looks So Delicious!! Can I ask where you got your Saucepan? Burner? & Spoon??!! I need those!! My burners do not burn evenly! Idk if I have the right pot size..& they say to use a wooden spoon so sugar crystals won’t form!! So.. I think before I “Try” making this.. I need the right tools!!

    When you're feeling experimental, cut down on the sugar. Many fudge recipes call for three cups, but you can often get away with two. Gives it a darker, more chocolatey taste, and actually better for you.

    Hun, if you put the sugar and Hersey in pan first and whisk them together, the sugar causes the hersey clumps from happening when you pour the milk.

    I tried this recipe, even tested the candy in water. I then added the butter, vanilla, and nuts. Stirred until it started to thicken, put it a pan and in the fridge over night. It turned out so soft, you can't cut it. Any ideas on what might have gone wrong?

      This fudge must reach 240 degrees thank you do not stir while boiling until it reaches 240.

    My grandpa added sugar milk butter in pan this is not what he showed me when I was a kid when he was alive he said put it all in pan ..I was taught to add peanut butter and vanilla in after it cools so it will harden faster ..his fudge was old school ..

      Yes. Will be absolutely fine. Just beat the fudge with a spoon after the soft ball stage is reached. When it thickens, pour it into a buttered dish.

      I store it in an air tight container until it’s gone. It keeps really well.

    I have made this twelve times it has never worked. Everything weighed perfectly. Did not stir after boiling.I’ve tried heating to 112 for a few minutes.Does not set. I tried heating it to 1118 for a few minutes. Does not set. Tried beating sheen away when cold at 43c. Does not set. Tried cooling in down in water and leaving longer to cool before beating until it’s so thick I cannot beat it any longer - does not set. Thermometer working perfectly. The soft ball test in water was spot on. Cannot work out it out!

    My Mama always told me to add a bit of salt to any sweet recipe you’re making. It will never taste sweet enough without the salt.

      That's what I want to know. Been thinking about this fudge my mom used to make. It was so buttery and crisp, this sounds like it, but I don't eat sugar anymore. Wondered about using Swerve. Monkfruit, etc.

    The original recipe calls for 3 cups sugar from the Hersheys cocoa can.

      That is true. I cut the sugar because it was way too sweet. With two cups sugar it’s still pretty sweet but it also lets the other flavors come through.

    I tried this recipe but my fudge did not set up firm at all, it's almost like chocolate syrup. I have no idea what I did wrong. I wish I knew if I didn't stir it long enough or boil it long enough.

      hitting the correct temp is crucial to it setting up.
