i think its because when water touches lava it turns the lava to obsidian but the water is still there and then the water just replaces the obsidian which always leaves you with 2 water and 0 lava per interaction point
The air spreading segment would make for an insanely awesome survival challenge video where the air constantly spreads and eats the world but at a super slow rate, so over time it just gets exponentially worse and has a chance to eat even the end portal

A player could actually exist and even beat the game in a world where air blocks spread to eventually destroy all nearby blocks, assuming that the decay rate isn't too fast. An effectively indestructible base could be made inside a large cube of water, and the player could live inside of it using a conduit and replacing any air within the structure with water or with transparent blocks like doors or slabs. Since water and partial blocks aren't air, they could exist undisturbed within the safety of a water cube. If the air has range, meaning that it can spread into soild blocks a few blocks away rather than just to adjacent blocks, a solution is to make the cube bigger or to keep the structures further from the walls of it. Renewable wood could be obtained from mangroves since they could be grown on dirt blocks that are safely inside of the cube. A renewable platform for fighting surface monsters and making iron farm platforms could be made by pushing cobblestone out of a cobblestone generator located under the water cube. This generator might have a small chance to break if the blocks or pistons momentarily count as air for a split second as they are pushed, but the damage from a broken generator could be self contained by the cube it and would be easy to fix. Additionally, food is a non-issue if the player hunts for fish mobs, makes an air free auto cooked chicken farm, makes an automatic kelp farm, or gets a mending rod fishing. Beating the game should be a least doable because the player could construct a water cube to to protect the portal, making the end more than merely a one way trip and preventing the portal from being destroyed, that said, the player would have to be quick once they enter the area with the end portal so that the portal doesn't get immediately destroyed. Unfortunately, I don't think that there is a practical way to keep the nether from eventually becoming a void because water cannot be placed in the nether. This means that obtaining exclusive resources from nether will require a complex and risky set-up and will periodically require new chunks if the player wants more after an existing area becomes to decayed.

I have a idea: invite all your fans into a minecraft server and compete in a competition where teams are formed and they have to build up a stairway up to a floating arena while the stairway is attached to the ground and if the teammates touch the spreading *insert any minecraft block or liquid* they die and they have to fight to the death until one team wins (oh and also if you want to make this a real thing give the contestants time to build up so they don’t die instantly)
