    I am constantly amazed at allllll the years I sautéed with oil....when it was never necessary. It’s how my mom was taught, how she Cooked and how she taught me....just like nearly every one I know. I’ve water or veggie broth sautéed for a couple years now.....and I use this example to remind myself that we can’t assume the things we were taught, that we never questioned...well...maybe we should just keep questioning... Thanks for all your good work in getting the word out : )

    I just made caramelized onion, from one yellow onion, surprised how it shrinks down. Eat the whole thing, couldn't stop myself. So good. My new treat food.

      Sue Collins Very good point! I'm vegan & do only whole foods, but am just now weaning myself off oils. Dumped salt a few months ago & sugar about 5 yrs ago.

      D P I have been plant based for 10 months and do not miss the oil but have a hard time missing salt. Salt is a big trigger for me so I use the Benson's table tasty and it helps a lot. I have lost 65 pounds and have lowered my blood pressure and am on half my dosage of metformin for type 2 diabetes. My goal is to be completely off meds! Plant based diet has literally saved my life!

    Thanks for that. I caramelized my sweet onions with garlic, Italian seasoning, and rice vinegar. They were delicious and oil free. You've been very helpful and I appreciate it.

    That was helpful for somebody like me who basically does not know how to cook. I can see that a problem with previous attempts was just not waiting long enough. Your occasionally adding a tad of water to keep the process going was also a good hint. I'm going to get a bag of frozen chopped onions today!
    I need a new frying pan too. My frying pans "wear out" every year or so and become non-sticky. You mentioned you have that pan for 30 years! How do you keep them in good enough shape so they remain non-sticky?

      Hand wash only in soapy water and no abrasive sponges

      Stupid non-chef question. Can I assume this way of browning veggies also works for other veggies, like broccoli and "mixed peas, carrots, and corn"? I'm tired of just boiling them and even if they are dry having them browned sounds tasty.

      Not really. If you like them browned use an air fryer or roast them

      I've read that letting them soak more than 10 minutes ruins the nonstick surface.

    I love my cast iron skillets but I still tried the no oil and a little water cooking method. To my surprise it worked really well. I used medium heat though and didn't stir as often so my onions didn't caramelize. The veggies were still very tasty. Will try higher heat next time and stir more. THANK YOU CHEF AJ!
    I still season my skillet w oil spray and immediately wipe off. But I'm curious now to find an oil free solution for this.

    Update...well dang. Been watching Dr Barnard talk about aluminum copper and iron in brain cells. Heartbroken but will switch to stainless mostly and use cast iron once in a while.

      If you stir the onions dry at first until they start sticking to the pan, then add about a tablespoon of water and stir in, and repeat a number of times until the onions are a nice dark colour and smell right, THEN you can add more water. Adding water at first slows down the browning process. Seasoning a skillet still requires oil, but wiping it off stops it making food oily. The miniscule amount left would be not worth thinking about.

    I’m sure you’ve addressed this but since I haven’t run across it I wanted your take on cooked vegetables. I know you eat a lot of cooked vegetables. However so many say that so many nutrients are lost once they are cooked. I eat salads and love cooked vegetables but would like to know that eating cooked vegetables provide me with nutrients. Naturally, I want to get is many nutrients from my food as possible. Your thoughts ?

      I'm not Chef AJ, of course, but I suggest you look at nutrient values of cooked and fresh vegetables online. Many veggies - carrot is one that leaps to mind - require cooking to break down the woody fibre that prevents the release of a lot of the nutrients. You can see Chef AJ obviously cooks vegetables, so I would assume that is perfectly fine. Some can be eaten raw if needed - like sweet potato and beets, but just cook them and you'll enjoy them and get everything you need.

      Aside from protein from plant sources, you can add a variety of beans, legumes, quinoa, and if you are not trying to lose weight, you can add nuts, seed and tofu which are much higher in calorie density per pound.

      In my usual grocery store I only find the orange sweet potatoes. At Trader Joe’s they sometimes have the japanese sweet potatoes, with white/tan flesh, and occasionally purple flesh sweet potatoes, which are great!

    Can I do this without using non-stick cookware?
    I have a bird and you’re not supposed to use non-stick with birds because of their delicate respiratory systems.

      Mattie Williams Absolutely! Dried fruit is 1300 cal a pound and nuts are 3200 cal a pound they are horrible for weight loss or maintenance

    I’m confused why you were worrying about the unhealthiness of oil and then go and put a crazy amount of high sugar balsamic vinegar on it at the end?

      That's not added sugar in the vinegar that is naturally occurring sugars that occur during the fermentation of wine or whatever your fermenting for vinegar. So you can't even compare that oil which is just 100% saturated fat.

    What about the "fat the brain needs to function". If you aren't eating any fats, won't that impact your brain in a negative way and create cognitive issues in the future?

      You get plenty of fat without eating overt fat....I haven't eaten any added fat in over 10 years.
