-------------------------------------------------------------------------
Thank you Anne West for allowing me to tweak your recipe. I hope you like my variation which I call "Comfort Stew". I made 3 changes to Anne's original recipe as follows:
1) instead of cooking the cabbage and potatoes in a crock pot I cooked them in a pressure cooker
2) I caramelized the onions first
3) I used 4 tablespoons of the white balsamic vinegar instead of 1.5 tablespoons
Anne brought a delicious dish of potatoes, cabbage and onions to a potluck. She made it in a slow cooker. I wanted to make it in the Instant Pot because when I put the 3 large onions one white, one yellow and one sweet) that the recipe called for into my crock pot it was full so I couldn't fit in the large amount of potatoes and cabbage the recipe called for. I figured since the onions were already in the crock pot I would just cook them in their using a recipe I saw here: www.cookistry.....
When the onions were done I drained them and put them aside and put their liquid in the 8 quart Instant Pot along with 2 pounds of red potatoes, cut into fourths, and a huge head of sliced cabbage. I added 2 teaspoons of minced garlic and 2 teaspoons of mustard seeds. I cooked on high pressure for 10 minutes. Release the pressure and stir in the caramelized onions and 4 Tablespoons of a reduced WHITE balsamic vinegar.
This was delicious served over rice.
I used the White Balsamic Vinegar from California Balsamic californiabals...

I'm Chef AJ and I make healthy taste delicious.
Love & Kale,
Chef AJ
I made this last night. I cooked the onions on the stove top because I did not want to wait for the slow cooker. I also added carrots and mushrooms and bagged shredded cabbage.. well.... I wanted to eat the whole pot! Outstanding!
Celery is also yummy added to this recipe
@CHEF AJ here Ya go, a cheater cabbage tip: throw in 1/3 amount, set on press cook, but don't lock lid, so there's a bit of cooking to settle the cabbage bits for a couple of minutes, then you'll have room for the rest of the veg...cheers
Thank you! As my sister has always said “no good deed goes on punished? You’re damned if you do and you’re damned if you don’t but we probably get at least 50 email today asking for product recommendations so it’s just easier to put them on the videos. Thank you for your kindness
No good deed goes unpunished.
I'm Hungarian, so I definitely will put caraway seeds in it, too.
Same isn’t this the same as our dish Pagache?
I threw my onions and all the other ingredients into my pressure cooker 15 lb of pressure for 10 minutes and everything came out fabulous and so delicious and caramelized all together. This is a wonderful recipe and I thank you very much Chef AJ. ❣️
Thank you Chef AJ! I made this last night, served over yukon golds and even the meat eating husband enjoyed it. I appreciate you so very much.
Every since I saw your video of you dropping a bag of crufresious crunch in your instant pot, that was a game changer for me. We have been enjoying veggie soup every night lately. Just learned that asparagus makes a amazing flavor soup too. Thank you😊
I have a Crock Pot brand pressure cooker and I love it. It's also a big one, 8 quart, I think.
Whoa...those three onions created such an amazing broth! It was making my mouth water as I was thinking of all the ways I can use this! I cannot wait to make this for Christmas. I have a relative coming over that eats no veggies except potatoes so I'm going to see if this works....if not, more for us!!! Yayyyy!!!
Took cook a head or two of cabbage in a slow cooker you have to circle back, it's not about doing it all at once because you WANT those different textures. After the first batch cooks down a little add the rest of you cabbage, mix it up and then turn down the head and let it slow cook.
So delicious! I made it haluski style by adding Smoked paprika, and a few drops of liquid smoke! Brings back so many memories ❤
I'm going to make this and try adding a can of drained organic lentils when done.
This looks delicious! I love mushrooms and think the onions and portabellas would be good. Thanks for another amazing recipe!
My pleasure!
I just found this post and I cannot wait to try it tonight. Unfortunately, I caramelized the onions in the crock pot for 24 hours and I just checked them and they are mostly burnt at 23 hours. Now I know for the future to check them at 21 hours. I will make due with some low sodium broth and some of the onions I can salvage. 🙂
A native Irish lady told me about 15 years ago that in some areas of Ireland (I can't remember which part) they use kale instead of cabbage to make colcannon!
Thanks for the suggestion about the 8 Qt.....I made the mistake of getting the 6qt first....can still use it, but the 8 qt is so much better!
This makes me want to add a lot of mushrooms and baby carrots and have like a faux pot roast!
YUM!
Yeah, mushrooms here, too. So how about doing the same exact thing in a slow cooker with sliced mushrooms as we're doing for sliced onions? I do this on the stove using the water the mushrooms generate and adding broth when necessary. Chef AJ, ever try to saute/caramelize mushrooms in a slow cooker?
Sarah Dawkins I haven’t I wonder if it would work
@@CHEFAJ I'm going to try it!!
Please let us know when you do make it and how it turned out. That sounds amazing. Thank you ☺️

Still following chef AJ for years
Instead of spending several dollars on a diverter, I followed another RUclipsr's advice and bought a 50 cent piece of plastic elbow plumbing pipe. It diverts the steam quite well.
I tried that. It just doesn't stay on. Might have to buy a diverter, after all.
Don't use an elbow, use a "Tee". An elbow is not balanced, whereas a "T" is.
That looks so good! Has 3 of my favorite main ingredients. Thanks!
Love the idea of slow cooking onions to caramelize! 8Qt Instapot!!! Bravo
You just made Colcannon (a traditional Irish recipe) 💜 ... well, without the vinegar .. and if it were mashed together .. I love it.
Linda Casey cool!
Actually colcannon also contains butter & milk... non vegan.
@@cxoot Yes, I use vegan butter and milk. Yummy
@@LindaCasey How do you make it? It sounds so good!
@@TheLouiseLanders Here's another version: ruclips.net/video/PTMxtpuKxR0/видео.html
This recipe is delicious! Thank you to Anne and to Chef AJ!
I didn’t have any white balsamic, so first I went to the computer and ordered some, and then I added the smoked hickory balsamic. Mmmmmmmm
Yum!!!
I would finish it with some raw cabbage mixed in for some crunch.
Awesome recipe! Made it today. Started the onions in my slow cooker yesterday. Even my picky husband liked it!! Didn’t have mustard seed. Used old style grey mustard.
It depends what else you’re eating but yes you can still lose weight if you don’t refrigerate them before you eat them. You must also eat a lot of vegetables and I also recommend a very low fat approach. Have you read my book by any chance?
I was finally able to get a copy of your book about ultimate weightloss. I'm looking forward to reading it
I would add my greens (kale or spinach) in there along with mushrooms & probably quinoa or brown rice for our fiber
Am looking forward to making this. Thank You. I already have two 6-qt Instant Pots, so can't justify buying a third, 8-Qt one for just the two of us.
That looks awesome! But I think it needs spinach as well
I put a thick dish towel over the value when I release the pressure👍🏼
That's a really good idea! I just move everything out of the way and clean up after.
Good idea but it makes my towels so wet
CHEF AJ yeah, that’s the downside 😜 but I just put it straight to the laundry and it’s no big deal for me because I’m always doing laundry!
What you’ve got is great! I just wanted to offer a solution for people who don’t have one yet...
@@heathercollins8917 I bought the inverter AJ mentioned no more mess or getting burned!
That looks so good and so yummy cabbage and potatoes and saute onions I am sure going to make it tomorrow I love cabbage and potatoes thank you AJ good recipe God bless 😋😋😋♥️
Wow, this looks so great! 👍 My next IP dish 😋
My German grandmother Oma made something similar that our family has been enjoying for over 100 years. No pressure cookers or crock pots though. She started off with some meat. Bite sized pieces browned, removed and set aside. (Oma used pork chops, Mom used pork steaks, I have evolved to chicken.) Sliced onions, browned in the fat and fond in the pan. Add cut up potatoes and cabbage coarsely sliced. S & P, dash Worcestershire, pieces of meat on top add some water and slowly cook covered, over low heat 'til potatoes and cabbage are soft. Add water if needed during cooking. Put meat on a platter and mash all the veg and drippings together to the consistency of lumpy mashed potatoes. Dinner is ready. Sounds awful, tastes great.
Oma used a Dutch oven on the stovetop. Mom liked a large electric frying pan. It all works. Our family has always called it "Gook".
I put my IP on the stove to release so the steam can go up the vent
🤯
This looks good. Will have to try this for our cold Michigan weather! You were on Dog Whisperer, many moons ago. I see you still have pups in your life.XO
You were salivating, what an interesting recipe. I just ordered an instant pot for Aus because there is NO fast slow cooker here with clean stainless sreel. Everything here is carcinogenic non stick. Love to see the Po in action. The potatoes looked wonderful.
Looks amazing. FYI - you might try putting your thumb in the small side of the red thingys and 4 fingers in the large side, it will be more comfortable. 😘
looks good
Yum, thank you! I'm going to make this tomorrow, think I'll add a little caraway seed.
Chris goatlady great idea
Mummy used to put caraway seeds in sauerkraut!
I make this quite often but not in the insta pot. When I do it in a wok, it stays beautiful al dente. We add capsicum and carrots. Onions are not required. It looks all soggy out of this pot.
Wow I’m hungry. Being a man your instructions are easy to follow. My wife gets your updates. We will do this tomorrow 🚴🏽♂️🚴🏽♂️🇺🇸
Thank you
Thank you again chef Aj can’t wait to make :-).
Shayne Khan please read the tecipe I wrote
CHEF AJ thank you so sorry didn’t see that part I do now ❣️❣️❣️
Great recipe.
I saw a 10 quarts Instant Pot the other day!
Perfect for St.Paddy’s day today!!!
Thank you--looks so tasty! Also--something I've been unable to locate is the vegan household sign that you showed a while back--couldn't quite hear where you got it -and- wonder if you might mention that item again sometime when you have a chance? Thanks (you are such a gift to our community)!
Oooh I want to make this TODAY! 🍽🥣♥️
Will definately try this delicious looking recipe, but will cook my onions on the stove first, actual caramalized onions are beautifully golden and rich. Sorry, those are basically just boiled onions, their gray color not so appealing. This recipe, delicious sounding all on its own, stirs the imagination as a jumping off point for so many variations. Who could possibly get bored on this way of eating? Thank you for sharing it with us. 🍎🍄🍆
Just finished my second bowl , we didn't have mustard seed. So I squirted some Dijon over the potatoes. We also got the idea some smoked sausage might go well. I have to say this is a flavor I have never tasted , but will again. YUM ! Thanks ! :)
@CHEF AJ. Looks so delicious Chef AJ, I've watched so many of your videos, you're such a beautiful lady inside and out, and you've helped so many people. Thank you and God bless you. Love and kale😊 Dana🙏
Thanks so much♥️
Amazed those potatoes got done in 5 minutes!
I think they took 10 minutes. The 5 minute comment was about pressure release. after 5 mins, she did a manual release.
@@judychancey5781 I could have sworn I saw her set the timer for 5 min.
I really need the 8qrt. I cant wait to try this!
thank YOU so Much for SHARING CHIEF AJ FABULOUS
I gave away my slow cooker and rice cooker after I bought my 8 qt. Instant Pot. Can I still caramelize the onions in my Instant Pot? (I usually just brown my onion and celery on the Saute button which only takes a few minutes.) I've never used the Slow Cooker function. I love your videos!!!
Sue Bower unless you do it for 24 hours it won’t be as good. I don’t think the pressure cooker works as good for this
I use my IP on the stove so when I release the seem it goes up the vent
Looks great, 😋 yum...👍❤️
Hi Chef AJ. I am going to make this today. How did you shred the cabbage, do you have a food processor that you use or a manual shredder or just used a knife or mandolin? Thanks for the recipe and showing us how to cook it in a pressure cooker.
Looking forward to trying this!
I loved it, but you will your farts more 🤣
@@fashioncreator5119 LOL
Thank you for such a wonderful recipe, this will be made often in our home
Made it!! Did the onions almost a week ago in rice/slow cooker. Next time I'll shove in even more onions because they sure do shrink. Used 6-quart IP for the cabbage and potato part..
1. 3.47-pound purple cabbage which stayed purple, so I'll use purple again next time.
2. Upped the minced garlic from 2t to 5t.
3. Upped the 2t of mustard seeds to 3t of ground mustard seeds.
4. Had room left in IP, so I added 3 small potatoes, upping the potatoes from 2 lb to 2.5 or 3 lb (forgot to weigh those extra potatoes).
5. Used the 4T of California balsamic vinegar (really good).
Started eating it and liked it but it needed something. Tomorrow when I make highly seasoned oat groats, I would have added them and that would do the trick. But earlier today I made highly seasoned cannnellini beans in IP and when done, I added a whole bunch of the ground mustard seed just for the hell of it. I like it! So I added the beans to my serving and it's FAB.
6. So I added the whole batch of the now more seasoned cannellini beans (from 1 pound dried beans) reserving 1 3/4C for Nutmeg Notebook Creamy Balsamic Dressing that I'll make tomorrow, mixed it in IP with big tongs and then ate another serving and I love it. I'm totally stuffed and have probably 10 meals, many of which will go in freezer to insure against waste and I'll cook it frozen in IP and have these great meals waiting for me. I'll probably finish it in a week. THANK YOU, CHEF AJ!!!
🤤 🤤 🤤 can’t wait to try this!!
I got my inverters love it! ❤️
I am cooking my onions now! Started bout 8 hrs ago in a slow cooker! I have high expectations AJ! 👋
What to do with the half a head of cabbage, potatoes, and many onions in my kitchen!
OMG, that looks good!! I just tried the Muraski potatoes - just baked them - delicious! Thanks for that tip in your TJ’s shopping video.
Yes, they are yummy! You're welcome and thanks for watching😊
I make this every week. We put tomato sauce & herbs in ours also.
YUM!
Hi chef AJ, Question, i can't seem to loose wt. i don't eat much at all. but do eat bean and rice etc, no oil. Do you eat beans, tofu ? Im lost at what to do.
I am going to make it! The only thing is that my husband doesn’t like onions ;(
Looks amazing - my mouth is watering!!
Looks delicious!
Maureen K it is!
Thanks!
Thank you! 🔔
My mouth is watering! Yum!
Love your videos and recipes but sometimes its hard to watch as the camera moves a lot and gives me motion sickness. it would be wonderful if there is a way to position the camera without moving it so much. thanks.
Looks yummy, but I don't have a slow cooker.
Get one, a large, they aren't expensive, watch for sales or Kijiji.. great for soups, stews etc
WOW-that looks AMAZING!!! I wish I had smell-a-vision.
I cut nearly all your recipes in half as I live alone and have a gastric sleeve. Less food waste that way. Even so, I often freeze the excess so I don’t waste anything.
Fantastic!
YUM. Thanks, Beautiful! ❤️
What elder can we use if we don't have an instapot or a pressure cooker?
The stovetop will work
Can the IP be used in slow cooker mode to caramelize the onions? I like to save on dishwashing by using one pot for a meal, i.e. caramelize overnight in the IP t and then cook the rest under pressure, remove, and then cook the cabbage/potatoes under pressure.
janet macdonald didyou read what I wrote in the description? You can but it’s not as good
Had someone tried to do the onions in a pressure cooker? Because I don’t have a slow cooker
Yummy
I would like to try this in the crock pot, probably with half of the head of cabbage, since I live alone. Where can I find the original recipe you refer to?
Please check the show notes
i only have a crock pot. Could I get the recipe using a crock pot instead of pressure cooker?
Wow! That looks Hardy !!! And I can eat as much as I want & still Lose Weight ?
Jay Gee I’m tired of WFPB people spreading the myth that you can eat as much as you want. That is not true for many of us even when we follow WFPB faithfully.
I am afraid of my pressure cooker. I bought it three years ago, with accessories. I’ve never used it. I gave it to my son. I’m not sure if he ever used it either.
Thank you for another beautiful & inspiring recipe! I don’t have a slow cooker so was wondering if you could suggest another method of caramelising the onions? Thanks 😊
Not one that will impart this deep rich flavor unfortunately
I caramelized my onions in a Dutch oven before adding the other ingredients plus carrots. Used a bit of veggie broth. Cooked everything on stove over low heat for a couple of hours. It was amazing!
I'm making this day after Christmas! I'm in Flagler Beach, FL and it's been a bit cold and breezy on this Island. BTW, I had a very nice group of all omnivores over for Christmas Day and cooked recipes from your TG and Xmas recipes that you provided to members. Not one complaint! They were all so surprised how "vegan" can taste so good. Yep! That's when I told them they were all whole food plants that were gluten-free and SOFAS-free! SURPRISE!!!
Wonderful!
I have a painful arthritic hip, should I avoid potatoes
In short...no
Not sure if this has been asked. How can I still make this dish without a pressure cooker? Can I cook the entire mix in a slow cooker, or is it better to cook in a large pot on stove?
Yes you can make this either in a slow cooker or on the stove
I plan on making this too, without a pressure cooker. I do have a crock pot.
Yum! Can you use red cabbage?
I don't see why not. I am actually going to try it this weekend that way. I have extra caramelized onions I froze
@@abbiejaye7019 I bought the California balsamic, the onions are in the slow cooker, but I bought purple cabbage. What's your verdict on purple versus green? Should I go get a green??
CHEF AJ When I’m eating it raw I always prefer the purple cabbage because it seems a little bit sweeter and it’s definitely prettier. But when it’s cooked in this recipe it gets very dark but I suppose the color doesn’t really matter
@@CHEFAJ Thanks so much for your quick reply! Okay, I'll try the purple and report back. The onions are cooking in my rice cooker that I'm so glad I never gave away. The house smells great, they're getting dark, and the liquid it formed will be amazing to throw into the IP with the cabbage & potatoes. 4-5 pounds of sliced onions that filled it to the very top cooked down to half the bowl very quickly. Next time I'll aggressively pack that bowl with more onions so I have more left over to freeze. How many cups of the caramelized onions would you say? 4 cups? 6 cups? I'll probably throw my whole batch in but for the future if I do succeed in shoving a lot more onions into the slow cooker. I guess you can't overdo caramelized onions, so however many you can make in a batch, just use it is probably the answer.
I would use all of the onions but that’s just me
I have a 6 quart instant pot (I wish I had known then to get an 8 quart). Do you know what quantity adjustments I can make? I would love to try this! Thank you
ADRIANA JIMENEZ GRANDE just fit in what you csn
Pardon my ignorance. I'm 1 month into the WFPB lifestyle and still trying to learn. When you say "reduced white balsamic", what are you reducing it with and by how much? Thank you for all your helpful videos. We're going to try this recipe this week.
Don Killough you just buy it that way, it already comes reduced
I am wondering carameliissing the onions would work using the slow cooker function of the instant pot?
GILLIAN Muspic they don’t come out as deep and dark
Was wondering the same thing. Good to know there’s a difference.
I love all your recipes and bought your book (I highly recommend buying it to everyone). It is so full of tasty recipes. Thank you for this one, I will have to try this tonight :-) xx niki
niki turner thank you ❤️
niki turner thank you ❤️
Is there a way to carmalize the onions without a slow cooker? If so, please share. I definitely want to try this dish. I want to know the water to onion ratio and cook on the stove top. I do have the six quart instant pot. Clearly I need to get the bigger one.
The other ways won't be as flavorful with this depth.
@@CHEFAJ I will try slow cooking in IP for 20 hours and see what we get and report back! Can't wait to buy cabbage and a few pounds of mushrooms, which I'll cook on stove. This dish is right up my alley. Chef AJ, you're fabulous!! (I have 6-quart for 2+ years. The only time I question it is when I make broth (once a month maybe). The IP is a fixture on my counter in my very small kitchen and I'm afraid the 8 qt will just be too big, like an eyesore.)
I just prefer the 8 quart I can fit all my recipes in it
Yep, I understand! I'd have the 8 if I had more room. Your advice is extremely great. Just ordered a bunch of the balsamics, 2 of the white because I know I'm going to make this fab recipe multiple times, and the curry and the garlic. Can't wait to see the difference between these and what Trader Joe used to call balsamic vinegar but now calls white modena vinegar. Big difference in price but I know they're really incomparable.
Hi AJ, I am confused, every time you use potato's are they cooked the day before and kept in the fridge ?. or can I just cook and eat the potatoes ?. ………….. which one is it. please advise.
tony cat either way is fine
my wife has been cooking, boiling and keeping in the fridge for next day for me to eat.. I have had the a baked potato but it seemed so filling that I thought that it should have kept till next day.. if your saying either way, then I can roast/boil and eat straight away, will I still lose weight ?. I have been only eating next day cooked potato. have I got this total wrong, resistance starch is what I was thing of...……….. this has knocked me for six.... totally confused.
What else could you use besides vinegar I hate vinegar.
I don't know a sub for vinegar sorry the recipe is based on white balsamic
Totally should rename this to COP or OPC (you down with OPC?? Yeah, you know me!)
Put any liquid in the crock pot with the onions?
Tamie Lonsberry nope
