Ingredients:
To make the Dough:
2cups Wheat flour
½ cup semolina
250 ml water
To Make Puchka/ Pani Puri Masala:
¼ Tsp Fenugreek Seeds
1 Tsp Carom Seeds
2 Tbsp Coriander Seeds
4-5 Dry Red Chilies
3-4 Cloves
2 Bay Leaf
1 Tsp Black Pepper
To Make coriander Mint paste:
¼ Cup Mint Leaves
¼ Cup Coriander Leaves
2-3 Green Chilies
Little Bit of Water
To Make Aloo Mixture:
5-6 Mashed Potatoes
2-3 Tbsp-boiled Kala Chana
1 Tsp Red Chilli Powder
½ Tsp Black Salt
½ Tsp Cumin Powder
1 Tsp Green Chili Paste
1 Tsp Puchka/ Pani Puri Masala
1 Tsp Lemon Juice
Coriander mint paste
2-3 Tsp tamarind Pulp
1-2 Tbsp Chopped Coriander Leaves
To Make Puchka Pani:
100 grams Tamarind
½ Cup coriander mint water/paste
2 Tsp Cumin Powder
½ Tsp Black Salt
1 Tsp Lemon Juice
½ Tsp Red Chili Powder
1 Tsp Chat Masala
1 Tsp Puchka/Pani puri Masala
Some Chopped Coriander Leaves
Water as required
To Make Churmur :
4-5 Pani Puri Papdi
2-3 mid-sized boiled potatoes
2 tbsp boiled kala Chana
2 tsp tamarind pulp
½ tsp lemon juice
½ tsp black salt
½ tsp salt
½ tsp cumin powder
½ tsp pani puri masala
2 tsp coriander leaves
panipuri water

Aaj maine yeh recipe try ki.pls tell dough roti ke dough jaise soft rakhna hai ya puri ke jaise tight ya in dono ke beech ka bcoz. According to measurement mera dough soft ho gaya shayad Suzi ne bhi jayada pani nahi piya.

try this receipe i got perfect golgappa. 1/2 cup coarse suji, 2tbsp maida,1/4 cup boiled water. Dont change the measurement. Need the dough until forms a dough no need to over do max. 2 mins. Then cover for 15 mins and not more. Then need the dough only once and make small pedas. Taka a dry cloth or towel to place the puris after rolling them. Place order wise. Roll puris as shown in the video. U have to roll all the at once and then fry not batch by batch. Heat oil nicely on high flame. Put one puri and press with karchi if puri rises that means oil is hot enough if not than oil has get more hot. once u see puris are puffing up add 3-4 puris let them puff up at high flame then lower the flame and fry the puffed puris until light golden color. Remove them and add new batch of puris on high flame again. If flame is high constantly puris will burn and get soagy later. Tips and tricks mater while frying puri
