With regards of the the masking tape ripping your paper off...thats due to the tape being too tacky for the paper. I find sticking the masking tape on to my clothes or my drawing board a few times before I stick it on to the paper works a treat. No more ripped paper!!
Also, pull the tape away from the artwork instead of straight across. Frog brand (I think that’s the name, it’s green) is the best I’ve used so far. Has never torn my 100% cotton watercolor ppr.

It's possible to use a little bit of solvent on a brush to 'paint' the pastel e.g. for underpainting. You can get rubber spatula to move the paint around, rather than your finger. Also, oil pastel never dries (although it does if you paint it with solvent). Sennelier make an oil pastel fixing spray.

Underpainting on felt paper can also be done but will not yield the same effect (little effect). And felt paper are more sensitive to scratching, oftentimes damaging the felt when scratched

I have a question for you. I have loved drawing, painting, and generally being creative in my life. As I am learning more, I haven't quite gotten the hand of trusting the process. I love layering my pastels, but it starts to go sideways once I stop trusting the process. How do you learn to trust that this ( insert technique) is what needs to be done without freaking out and losing the image in your head?

Also, use a hair dryer to heat up the tape. It makes the glue less sticky and pulls up, no problem!
I found a true artists masking tape that's low tack.

Continue on what medium you are comfortable and what makes you happy. Oil pastel can be hard for you but you can learn it slowly in an enjoyable pace

I agree. Acrylic / poster work for me. Oil pastels are just annoying becoz i can't merge the colors in the way I do it with acrylic
