Burger Buns: Simple 1 Hour Recipe

Ingredients:
400g (3 cups) flour
42g (2 tablespoons) honey
8g (1.5 teaspoons) instant dry yeast
5g (1 teaspoon) salt
240ml (1 cup) lukewarm (105F/50C) milk
28g (2 tablespoons) melted butter (use less than 5g of salt if you use salted butter)
1 beaten egg
Beaten eggs for brushing (optional)
Sesame seeds (optional)
Instructions:
Here’s a simple burger bun recipe that takes only about an hour.
Start by combining the milk, honey, butter, and yeast. Stir them together until well mixed. Let it sit for a few minutes until the yeast becomes frothy and activated.
Add the egg, flour, and salt. Mix all the ingredients together until they form a sticky dough.
Cover and let the dough sit for 5 minutes to allow the flour to absorb the liquid and the gluten to relax.
Scrape the dough onto a lightly floured surface and knead it for about 10 minutes until a smooth ball forms. If the dough feels sticky, use a bench scraper or move your hands faster as you knead.
Then divide up the big ball into smaller balls. I use 120 grams for Big Mac style buns with a middle section, and 100 grams for normal buns.
Shape each piece into a round ball by tucking the edges underneath and rolling it between your hands. Place them on a baking sheet lined with parchment paper, leaving some space between each bun.
Press down on each bun to flatten them a little bit.
Cover the buns with the kitchen towel or plastic wrap and let them rise for 15 minutes until they puff up slightly.
Preheat your oven to 375°F (190°C).
Brush the tops with egg and then optionally sprinkle sesame seeds on top.
Bake the buns for 12-15 minutes or until they turn golden brown.
Remove the buns from the oven and let them cool on a wire rack.
Slice in three sections for Big Mac buns and two sections for regular buns. Add butter and toast them on your pan or griddle. And then assemble your burgers. The buns are light and fluffy and hold together well.

I made this recipe without the egg and only used egg for the egg wash and they stayed soft for over a week. ❤❤❤
try using equal parts egg white and water. perfect color imho! try em! also, you can lower the temp by 10-20 degrees longer bake time but better consistency between crust/crumb!!
Made these last night and my husband ate 2 veggie burgers then ate 2 more buns after I went to bed! Won't be making these diet crashers too often! Thanks 😊

How did it work out with starter?
Made these today but halved the recipe as I was only making a few sliders. Used 1 large beaten egg, 2 tablespoons for the dough and reserved the rest for brushing before baking. I baked two buns at first and found that it's crucial to flatten them a bit so you don't end up with a bun sphere.😆 Sesame seeds are a must as they add great flavor that compliments the bun. Delicious! Will definitely use this recipe again. TYSM for sharing!

If there's someone like me who accidentally used active dry yeast before reading the full recipe and seeing "instant yeast"... it'll still work 😅 I just let my yeast proof the full 10min and then let my buns rise for 20ish min instead of 15. Came out just fine and VERY yummy 😋 love this recipe!

Make sure you proof at around 80°. If your kitchen is colder than that, then put it in the oven with the light on.

Followed the recipe exactly as written except I let the shaped buns proof a good deal longer than the 15 minutes suggested in the video, until doubled in size. They came out incredibly well. Thank you for the recipe.
It may have had to do with your room temperature, I proof with an ambient temp around 80° and if it’s not 80°, then I will put it in the oven with the light on. Glad they turned out well.

I turn my oven on -count to 10 - then turn it off , put the dough to proof . It works. Always wet a towel on a cookie sheet to help rise. I live in mountains cold dry area

Yes. Wrap individually in plastic wrap, then foil, to minimize contact with air.

Awesome. Yeah. Just fold into a loaf and bake in a loaf pan. I’m going to try it soon too. Will post time and temp. I’m guessing a little longer cook time since one piece of dough.

They will be good for 2-3 days. I keep in a regular Tupperware container on the counter and then microwave for 10 seconds or toast.

Does the butter/milk need to be warm to begin with for the yeast to bloom or is using all cold ingredients fine for this?
Warm helps it proof. Otherwise it will take many hours.

I used this recipe, I would say I would add half the amount of honey, because my bread just came out tasting like honey

any idea why did mine explode? they split in half horizontally and some cracked on top too
Oven too hot. Might want to calibrate it. Or they were over proofed. Try shorter or colder proof next time. Dough might have been too dry for your area. Or you didn’t build enough surface tension when making the balls.

This dough would not smooth out for some reason. I did all measurements in weight. The only thing I did differently was put it in a kitchenaid instead of hand mixing. Dough was incredibly sticky no matter how many times I scraped it and how fast I kneaded. Dusted it a few times to incorporate more flour and it soaked it up like a vacuum. Currently letting it sit in an oiled bowl to proof.
Try letting it rest a bit if too sticky. That should help relax it.

Do you have a no milk version?
You should be able to 1:1 substitute cows milk, with almond, soy, or oat milk. I haven’t tried it though.

Yes. Just make sure lukewarm. It won’t be as flavorful, rich and they may not be brown but should still work.

Help why was it so extremely sticky that I could not mix so I added more flour and when I baked it came out extremely hard it did not even puff what did I do wrong😭
If it’s too sticky, you might wanna just let it rest on the counter for a little bit to let it relax. you may want to also check to make sure that your yeast is not expired. Also, when you are resting the dough, make sure it’s around 80°, you can put it in your oven with the light on.

Yeah it doesn’t take much when they rest at 80F and you use enough yeast.

Ok guys and gals, help me out... I've done this recipe multiple times with great success but that last 4 times the dough wont rise... What am I doing wrong?? Its very frustrating.
Expired dead yeast. Or room temp should be around 80. Put in oven with light on to get close to 80.
Mine didn’t come out this way :/ the dough was stiff and dry when I made it
Try lower oven temp or cook less time.
