Molly and Andy Learn to Make Lasagna: Part Two

  • Finally! The part 2 you've all been asking for !!!!!
    Again, the brainchild of a collab with Andy Baraghani, this is about as un-Italian as a lasagna can get. Really, it eats more like a potato gratin, that just so happens to have some lasagne noodles layered throughout. Oh, and don’t forget the slices of mortadella that are stacked throughout it and then piled on top and baked until crispy crunchy and fatty. An herb lovers (Andy) and morty-d lovers (me) dream dinner awaits.
    Ingredients:
    PRODUCE
    2 medium shallots (4oz)
    8 garlic cloves
    2 rosemary sprigs
    2 pounds yukon gold potatoes
    2 lemons
    1 large bunch basil
    1 bunch parsley
    ½ large bunch dill
    PANTRY
    Extra virgin olive oil, for drizzling
    ½ pound dried lasagna sheets
    Kosher salt, freshly ground black pepper
    DAIRY
    4 cups heavy cream
    1 pound fontina cheese
    4 oz grated parmigiano reggiano
    PROTEIN
    1 lb thinly sliced Mortadella

    I like your energies together. Collaboration is hard. You two have totally different resting heartrates, I'm sure. And it was an honest chronicle of how your enthusiasm for a project can rise and fall as you go. In developing the recipe of two chefs in the kitchen that day, it's a multi-layered and lively success. Very fun.

    3 things: 1- the color scheme of the lasagna? Love, like retro 60s 70s pink mint and cream just yes. 2- More Andy 3- It was fun to see you guys kinda f it up but still keep going, also just makes me want to get weird and design my own lasagna but following (some) guidelines. Really enjoyed the videos!

    The fresh pasta would have worked probably if you did not boil it and just baked it as it is. Either way, the mortadella was genius! I wanna try this but with pastrami!

    Yes, those potatoes needed more cooking.
    They should have been parboiled.
    A potato gratin would need an hour maybe??
    But such a lovely spring dish!

    Why cook the fresh pasta at all? the time in the oven would probably be enough to cook it through. I don't even pre-cook my dry pasta and have never had a problem.

    I don't think you're supposed to boil fresh lasagna. It seems like it would cook in the baking process. I might be wrong.

      absolutely, you cannot put fresh sheet pasta in a rolling boil it will fall apart. For a Lasagna it would not need pre-cooking.

      I totally agree, if it was the hard sheets from the package then you'd boil it although I make mine with raw pasta sheets, not preboiled ones and the pasta has a more of a bite to it. Just a personal preference!

    The fresh pasta ‘problem’, was that 1) with the amount of cream & how thin the cream was, it really didn’t needed cooking before hand, 2) if the goal was cooking the pasta, please, one at the time! Or leave the pasta to air dry a bit more, so the consistency is not a fresh as it was, and it could handled the boiling in a bundle & the tongs!
    The rest of it? Thats the type of caos I love to see in the kitchen, have missed the two of you together!
    Loved seeing a bit of how to create a new recipe, and that green sauce? Definitely going on rotation, since i’m lasagna kind girl year round! ✨

    Did I make this with irrational confidence before part 2 came out: yes
    Did I over-whip the cream into basically whipped cream/butter: yes
    Did I know immediately I f'd up: yes
    BUT was I in denial and proceeded frantically with assembly: yes
    Did it still come out SO GOOD: HECK YES

    The pasta fell apart because it was not worked enough. You could tell even from the ingredients shot, it was way too rough. YOu have to work it, rest it, then run it through the machine or by hand several times folding and rerolling.

    I know this is gonna sound whiny and annoying but when i saw the broken pasta being thrown away i cringed because i wouldve made something out of it. Thats just me hating wasted food tho. Anything i burn i still eat because ya girl just cant afford to throw em away

    Fun project, love their chemistry! But I really don't get the potatoes. I'm thinking spinach and leeks. And prosciutto instead of mortadella. Or you could make it with just potatoes and no noodles.

    May I suggest a scrap bowl to throw the pasta and herb ends be thrown into and then composted? I hate seeing food thrown out, even wonky noodles!
