Where are you buying your Parm? A chunk of real imported Parmigiano-Reggiano that size should go for like $15-20 tops, and it goes a long way. You can buy a much smaller piece for a few bucks and just buy it as you need it. Personally, I mostly stick with Pecorino-Romano, which is a similar cheese, but a bit sharper and slightly cheaper. I just buy a small chunk of Parm if I need it for a specific purpose. There's also Grana Padano, which is like a milder Parmesan, but high quality and less expensive than real Parm.
I love the way Molly gives herself to things when she tastes them more than anyone else in BA. It's like a zen thing. In that moment, she is _only_ tasting, and when it is right she fills with joy. I hit that sometimes, but whenever I see her on Bon Appétit it happens. I want more of that from myself. It inspires.

I really like this hearty recipe, almost a 'steak and potato' version of the Caesar. I like that it's not flimsy. The grilled romaine is like the 'steak' and the croutons act as 'baby potatoes'. The dressing looks so delicious and sufficiently full bodied. I want one 👍

Molly, I made this. The quantity you listed lasted me 3 days. I'm going to make more tonight but double the quantity. The only part that's time consuming is when adding the oils to the mixture. I added avocado oil instead of a vegetable oil and it worked perfectly. Thank you!!!!!
I just used Molly's homemade ceasar dressing! I tried another recipe yesterday and it was all EVVO and wasn't so tasty. TRIED MOLLY'S and its exactly the restaurant flavor I was looing for! Outstanding! This will absolutely 💯 be my go to ceasar dressing. Her recipe is out of this world. I followed every ingredient she used. In my opinion the anchovies and parmesan and regular oil added in slow make this dressing. Gonna toss in some diced chicken. Walla! Healthy delicious salad 🥗 for dinner or lunch. This dressing is amazing. Its heavenly if you're into ceasar salads!

I think the grilled Romain is awesome, you lightly wilt the outside while retaining that proper crunch in the middle. Not to mention if you are pairing this salad with a steak (as you should) it will pick up some of that flavor off the grill.

whats with all the hate about grilled lettuce? i make a louie salad with grilled romaine and it delicious. Just grill the lettuce on high heat for a shprt time, plus if you have a binchotan grill all the more better because it gives the lettuce good smokey flavor which makes it slightly more meaty.
I wonder if all the people saying "Gordon Ramsey says not to grill lettuce" have ever actually tried it. Shockingly, people have different tastes. I for one love cooked lettuce, and in this video only one side is grilled so the other side is still crispy. I would have chopped it up though, those are a little big.
One on my favorites! Nice, Molly! Socks are amazing. I have tried the towel thing with my bowl; dry towels won't hold a bowl that well, but if they're wet the bowl will sit more firmly. My grandma always did that little trick.

Trader Joe has a 36 mo aged Reggiano Parmigiano I think $12/ lb a little. Costco has a good 24 mo .. A little goes along way especially if you microplane instead of shaving the chese you get most for your $$. Plus before you throw out, take rind put it in a sauce,soup or bolognese.

As it should be. It takes crisp, crunchy lettuce and makes it all soggy.
Also he had a problem with it not being very sanitary because you can't really wash all the lettuce that way.
