    This elevated ham and cheese sandwich is fun and filling and great for turning an every day brunch into a special occasion!
    Prep Time: 10 minutes
    Cook Time: 30 minutes
    Total Time: 40 minutes
    Yields: 2 sandwiches, easily multiplied
    Ingredients:
    4 slices thick sliced bread (Bakery)
    2 TBSP salted butter (Dairy)
    2 TBSP flour (Aisle 6)
    1 ½ cups whole milk, warmed (Dairy)
    Kosher salt, to taste (Aisle 6)
    Black Pepper, to taste (Aisle 6)
    Pinch Nutmeg (Aisle 6)
    7 ounces shredded Gruyere (or Swiss) cheese, divided (Deli)
    1 TBSP Dijon mustard (Aisle 3)
    8 ounces sliced ham (Deli)
    2 eggs (Dairy)
    Chives, for serving (Produce)
    Directions:
    Preheat oven to 400 degrees. Line a baking tray with tinfoil and lay the pieces of bread in an even layer. Toast bread for 5 minutes, flip and toast for another 5 minutes.
    While the bread toasts, add the butter to a small saucepan set over medium heat. Cook until melted and then stir in flour. Stir constantly for 2 minutes, or until flour has cooked down slightly and the mixture is light brown. Stir in the warmed milk and cook until sauce is thick enough to coat the back of a spoon. Add a generous pinch of kosher salt, freshly cracked black pepper, and a pinch of nutmeg. Remove from heat and stir in 3.5 ounces of the shredded gruyere.
    When bread is toasted, spread two slices with the Dijon mustard, top with more shredded cheese, sliced ham, and a generous spoonful of the cheese sauce.
    Add the top piece of bread to the sandwich and cover with more cheese sauce and the remaining shredded cheese.
    Bake sandwiches for 10 minutes then broil for 2 - 4 minutes, or until tops are golden brown and bubbly.
    While the sandwiches bake, fry up two eggs sunny side up. Top the sandwiches with the eggs and sprinkle with chives before serving.
