Should we have all classes picked and schedules created prior to the
two-day orientation (since day 2 of the orientation is when we are supposed to register with our advisor)?

You shouldn't need to have your classes and schedule picked, as your advisor will help you through that process! But it definitely doesn't hurt to explore class options before that meeting so that you can mention any that really interest you to your advisor
