    WATERCRESS SALAD
    INGREDIENTS
    • 2 Tbsp olive oil
    • 2 tsp apple cider vinegar
    • 1 Tbsp tablespoon lemon juice
    • Salt and pepper to taste
    • 4 cups watercress, washed, tough stems removed
    • 1 avocado, cubed
    • 1 small cucumber, sliced in half-moons
    • 1 mandarin orange, divided into wedges
    • 1 Tbsp capers, drained
    • 1 pack 3 oz wild-caught smoked salmon
    1. In a small bowl, combine olive oil, vinegar, lemon juice, and salt and pepper to taste.
    2. Toss watercress with dressing. Add avocado, cucumber, mandarin wedges, and capers.
    3. Lightly pan fry smoked salmon, cut up into bite-size pieces. Serve it on top of the salad.
    For a Snack, Tracy recommends dark chocolate or a GoMacro Bar.
    And remember to drink plenty of water
