    IRON BOWL
    INGREDIENTS
    1 cup pearl barley
    2 cups broccoli florets
    3 Tbsp extra- virgin olive oil
    3 Tbsp lemon juice
    ¼ cup scallions, thinly sliced
    ¼ cup fresh cilantro, chopped
    ¼ cup fresh parsley, chopped
    Salt and pepper to taste
    1 can white beans, drained
    1 can safe-catch tuna, drained
    Handful of sunflower seeds (for garnish)
    1. Bring a large saucepan of salted water to a boil and add barley. Let boil for about 15 minutes until barley is cooked but still al dente. Drain it and spread on a baking sheet covered with paper towels to cool down and dry.
    Place a steamer insert into a saucepan and fill with water to just below bottom of steamer. Bring water to a boil. Add broccoli, cover, and steam until tender, 3 to 5 minutes. Let cool.
    In a large bowl, mix together olive oil, lemon juice, scallions, cilantro, parsley, salt, and pepper.
    Add barley, broccoli, white beans, and tuna, and toss with dressing.
    Garnish with sunflower seeds.
    For a Snack, Tracy recommends dark chocolate or a GoMacro Bar.
    And remember to drink plenty of water
    Tracy also has one cup of coffee per day with oat milk.
