Another way to get mince meat to bind well, is to knead it (almost like a bread dough). The kneading will loosen the protein fibres in the meat granules and make them stick together. No need for egg or breadcrumbs (although breadcrumbs the water and fat coming from the meat during cooking and give a moist burger).
A friend of mine owns a restaurant specialized in serving steaks and burgers and he's the chef. His burgers consist of NOTHING MORE than just BEEF, and I'm not even 100% sure if he adds salt to the meat. All of the flavour in the burgers is from the sauce you order it with. And you can go with spicy taste, cheesy, vilage-like (onions, pickles, bacon), just DO NOT SEASON the meat to make it versatile. And the key to bind the burger is just working with your hands on the minced meat to release the "glue" that keeps it all together, and serve it medium rare, tender, moist and beautifully pink inside instead of dry, cooked through cardboard burger. Just awesome.
it's sooo much better if you boil the chips before frying them. it will get mushy on the inside but nice and crispy on the outside. although you need to drain and freeze it before frying low and high for the moisture be released and gives you the crumbly edge for that crust. Then after that, proceed to low fry and high heat frying like you did

I don't really eat very "fancy" food, as in my house we don't experiment too often, but as a newer viewer that has binge watched sorted, these are really inspiring me to make food more interesting instead of just as fuel. I'm only 17, and very dependent on my family, but whenever I watch you guys have fun and eat awesome food it makes me want to be more independent and eventually make some of these recipes (kladkakka recipe is necessary in my life lol). You guys are incredibly inspiring to me so thanks so much :) Btw Barry, your facial hair game is so strong here haha!

I love the idea of doing a recipe with a more exotic meat. Wild game can be so flavorful! (Even when Ben merely buys it!) I would love to see some more exotic meat full recipes. Just a suggestion, but alligator and bison are both very nice meats, and they can be found from a sustainable source. Thanks you guys, and keep it up!
Great video with a really great looking burger! I noticed the brew you chose and was wondering if perhaps you could float the idea of beer pairings on that series. Perhaps not mentioning the exact brand due to free advertisement but maybe just saying something along the lines of: "we chose a lovely stout to go with the burgers because..." Thoughts?

hey +SORTED Food! i just want to suggest a filipino dish called 'adobo'. its like a meat (yup, coz you can use any meat you like) stew with soy sauce, vinegar, sugar and other spices. its a bit odd coz its a bit sweet for a savory dish. plus! it would even taste better when left for a few days (refridgerated, ofcourse!). just suggesting! 😊

When I was very little, someone gave my dad some venison (he was a chef). Since my parents knew I would refuse to eat it if I knew what it was ("NO! I'm not eating Bambi!), he put it through a meat grinder and they served it to me as a hamburger. Just a plain ol' regular hamburger, so eat it up, kid. But even as a kid I had a pretty good sense of taste and KNEW that was not how burgers tasted. I thought the meat was bad/off and kept telling them that. They kept insisting it was fine. This went back and forth with me getting more and more upset that my parents were trying to feed me off meat. They finally 'fessed up. Three guesses what I yelled (hysterically by this point). They never tried it again.
