We live in the New England and enjoy James Gin in regular and navy strength, it's lovely on it's own or mixed. Would love to try the gin fish and chips, may we sugest you soak the fish in the gin so it retains the flavor during frying. Cheers!

I agree the fish and chips at your pub is fab - am a bit of a foodie and the fish was by far the best I can remember having. Be careful with the seasoning of the peas was the only slight adjustment that might be worth considering. Otherwise perfect. And that was just my taste, anyway. One other thing. If you attempt the 50k Strava cycling loop from there, I suggest you get properly fit before attempting it. Several steep hills up the sharp face of the escapement which make it a wee bit more challenging than you might expect! But it’s a great route, and you return to a great, cleanly designed, stylish pub. Modern and yet traditional at the same time. A bit like an alpine hostelry in some way I can’t define, except not in the Alps, clearly.
My mom always told me a story where she was making fish and chips, my uncle poured beer in her batter telling her it tastes better. She was livid with him because thats all the ingredients for batter she had so she made the fish anyways. She swore me to secrecy because it did taste better, the best FnC she ever made but she was so angry at my uncle she refused to tell him.
I wonder if the batter would have worked with tonic instead of the soda water? It's just tonic often has that hint of lemon, which as we know goes well with fish.
I've often found my chips to be a lot more mesmerizing on the way back from the pub tbf although they have a tendency to elude me and end up on the floor.

as the alcohol is boiled off anyway so not part of the end product in this case could you reduce the duty by boiling off before shipping as "cooking gin"?
You could make an "accompanying pairing dish" where the gin fish n chips come with a gin drink or shot etc. That one price for both may entice a patron to order it, split the duty - ?
