  • I made the best vegan Greek yogurt with just 2 ingredients and it is AMAZING! So easy! The recipe and instructions are below

    VEGAN GREEK YOGURT
    2 QUARTS UNSWEETENED ORGANIC SOY MILK
    1/4 CUP OF VEGAN WHEY FROM LAST BATCH OR IF THIS IS YOUR FIRST BATCH USE 1/4 CUP OF KITE HILL PLAIN GREEK YOGURT.
    ADD BOTH INGREDIENTS INTO YOUR INSTANT POT, STIR, PLACE LID ON TOP AND MAKE SURE IT IS ON SEALING AND USING THE YOGURT SETTING SET FOR 12 HOURS.
    AFTER 12 HOURS ADD THE YOGURT TO A GREEK YOGURT STRAINER AND LEAVE IN THE FRIDGE FOR 48 HOURS. AFTER 48 HOURS REMOVE FROM FRIDGE AND REMOVE LID AND TAKE OUT THE STRAINER AND PLACE A PLATE ON TOP AND THE FLIP IT OVER ONTO THE PLATE. PLACE IN CONTAINER OF YOUR CHOICE AND KEEP IN FRIDGE AND WILL LAST ABOUT A WEEK. YOU CAN ALSO FREEZE IT.
    CREAMY 3-2-1 DRESSING
    170 GRAMS YOGURT
    3 TABLESPOONS OF A FLAVORED BALSAMIC VINEGAR
    2 TABLESPOON DIJON MUSTARD OR SPICY BROWN MUSTARD
    1 TABLESPOON MAPLE SYRUP
    1-4 TABLESPOONS OF WATER
    ADD THE FIRST 4 INGREDIENTS TO A BOWL AND WHISK. THEN ADD WATER ONE TABLESPOON AT A TIME UNTIL YOU GET THE DESIRED CONSISTENSY. DIVIDE INTO 4 CONTAINERS.

    I didn't know you can use the whey as a starter!! That is brilliant, very sustainable, I'm gonna try that, thanks for sharing. I make mine with 1 pack of soymilk and half can of coconut cream mixed well and ferment, drain and boom! It really tastes like cream cheese... I put some salt and chopped chives or green onion and it is perfect spread for anything..

    I’m excited to try using the whey as a starter, I always just threw it out. I’ve found that my yogurt gets much thicker if I make it in a glass jar placed in about 2 inches of very hot water in the instant pot. I encourage you to test the jar method with a small amount and let me know what you think. I also set my yogurt time for 14 hours. When I do it this way, I only need about 4 hours to drain it. Making this yogurt feels like magic

      @@ChewonVegan You misunderstood, it comes out thicker from the instant pot cycle because the bacteria grows better in a glass container, so you only need to drain the yogurt for a few hours to get it to be the thickness you like. Instead of how now you said you were draining it for 24 to 48 hours, it could be only 4 hour of draining. Sometimes it comes out so thick from the beginning that I use it that way.

    I can't help but feel that I contributed to this recipe as I gave pbd a bunch of tips and pointers after the first video and this is basically my technique! Lol.
    If you want to try next time, I love to actually whip the yogurt after I strain it for an even creamier consistency.
    Also, be sure to sanitize the ip before use as it is a really sad day when you lose a batch.
    I have been doing this since i went vegan 9 years ago as i never found a plant based commercial yogurt that i liked. I make double batches and use in all sweet and savory applications. I use it as my sour cream replacement too and have had sceptic meat eaters go back at it with a spoon!
    The yogurt button is the most important button on my ip! ❤❤❤

    Hi Deb, I have been making my own soy yogurt in the Instant Pot for the past few years. I use only 1 litre at a time and put it in a 4 cup measuring cup and then put that into the instant pot. I find 12 hours works well. I usually only strain it for 24 hours might try the 48 hours the next time. It's so versatile.

    Homemade yogurt I just made in the instant pot with two pint jars using 3 probiotic capsules. I'll save the whey liquid from this yogurt batch and next time I will just add it to the clean instant pot with more soy milk and when strained I will save the liquid and what I don't use I will freeze. Thanks! This will be much easier and I'm looking forward to using the strainer too!

      I’m so glad you’re going to try it! You won’t regret it. I think you may be able to use your current IP on the warm setting over night. I would try that first before buying a new one.

    Thanks for this recipe! I love kite Hill also and have noticed the price increasing in our area too..
    I am transitioning to plant based eating so I am happy that I found you… maybe my family will not be so shocked about my eating plant based when I mention I have found a plant based eating RN!     This looks amazing. I can’t wait to try it! When I press the yogurt button on my instant pot, it comes up on boil. It seems to have two settings, low and boil. Is it 12 hours on the low setting? I am going to use soy milk, but all the instant pot yogurt recipes I have found boil the milk first. Thank you for your recipes!

      I have never boiled the milk. So I can't really speak to that. If you have a warm setting on your IP I would use that.

    I love homemade soy yogurt and eat it every day! I like to use a small container of plain Cocojune coconut yogurt as my starter with one quart of organic Edensoy plain (just soybeans and water) soy milk, in glass jars in the Instant Pot for 10 hours. Been doing it for a couple of years and it turns out great every time!❤ I tried making Greek style yogurt once straining it through cheesecloth and that did not work well. Your strainer looks perfect!

      You can keep in the fridge for a few days. Otherwise I divided it up into a few containers with 1/4 cup in each and store in the freezer.

    Homemade yogurt! I haven't found vegan greek yogurt where I live in Canada. I do, however, buy organic coconut milk kefir. It's super thick like greek yogurt. I pay $27.00 for a large mason jar! I've seen many recipes for greek yogurt, but yours is the easiest! Do you think that the coconut kefir would work? Thanks again, Deb, for another great recipe. 😊

    I started making this on Christmas Day. It is an absolute game changer. I have not been able to find a decent salad dressing since I went WFPB. I never am without it. Getting the euro strainer is worth it.

      @ absolutely! What’s really important is that I’m upping my protein and probiotics. There was a study done at Stanford that showed that natural probiotics in foods are much more powerful than taking supplements. Unfortunately, what they used in the study were dairy based foods. I’m so excited to have found something that tastes creamy, delectable and is super healthy.

    I make yogurt with this method, except that I just strain it with a clean tea towel lined strainer. Also I only have to let it drain for a few hours. So much better than anything premade, in both taste and texture!

    Homemade yogurt. OMG how easy is that. I've been intimidated making it in the mason jars so have never tried. Did you use a 3 or 6 quart ipot? Thank you so much. I always hate paying so much for the yogurt and only buy when on sale. Now i have to get the strainer. Thanks again.🤗

    Wow! Easy. What setting should I use if I don't have a specific yogurt setting on my insta pot?

    Hi Debi, ?? I didn’t hear what to do to keep the starter for the next time. Do I just keep it in the fridge and will it last more than a week or would I put the starter in the freezer?? Thank you for the great video. I just recently bought my strainer but like many other times I let fear of not succeeding or not knowing what to do keep me from making any!

      It looks like my comment didn't go through. You can freeze the whey to start your next batch. I put !/4 cup of it into a few jars and freeze them. I hope you enjoy the yogurt as much as I do!

      Not really, I'm sure it has calcium, vitamins etc. macros for a serving and yours may vary. It depends how much of the liquid drains off or yours. so an average serving is 140 grams. You will get 156 calories, 16 grams protein, 7 grams carb and 6 grams fat.

      You can freeze it if you want. I freeze a couple jars with 1/4 cup of the whey. I have given some away but I do throw out the rest. I am trying to come up with something I can use it for. I hate throwing that out.

    Homemade yogurt in my Instant Pot is the best! Like you, I noticed the price of the better plant based yogurts had skyrocketed but I also found it nearly impossible to find plain soy yogurt which is my favorite. 2 questions - #1 How long will the whey keep? I assume it can't be frozen. #2 Could you use the leftover whey to thin out the dressing?

    The end result, the thickness, looks exactly
    like the animal based Greek yogurt i used
    to eat.
    For whatever reasons,
    my palate now no longer likes the taste of
    soy milk. Is it possible to use another type
    of plant milk?
    Or is soy the one that solidifies
    the best for that Greek homemade yogurt process?

      I've only used soy milk, but you could certainly try another plant-based milk! I would recommend doing a small test batch to see how it turns out. You may want to search you tube for more information

      I have seen videos on you tube with Almond milk but the process is a bit different, I would search for a IP Greek yogurt recipe using the kind of plant milk you want to use.

      I don't know if using a flavored yogurt would affect anything. I've never done that. You could sweeten with maple syrup or any sweetener of your choice. I like to add vanilla or chocolate protein powder to mine, it's so good.

      Yes you can freeze it. You could use a 1/4 cup of your homemade yogurt. That should work. Straining it is what makes it Greek Style and intensifies the protein content.

      The amounts vary depending on how much of the liquid you get out of the yogurt, but on average 32 ounces. I use The formula from @plantbased dads. You can look for his Greek yogurt video on his You tube channel. I have not tried to freeze the yogurt. I use it everyday I use it pretty quickly so need to freeze so far.
