I understood that when you remove oxalates by boiling, you had to throw away the water. I assumed the oxalates went into that water. Are you saying that just cooking oxalates they are destroyed just by heat and disappear completely?
You are correct, the oxalates dissolve into the water. One study showed that an assessment of the oxalate content of cooking water used for boiling and steaming revealed an approximately 100% recovery of oxalate losses.
You made me want to run I to the kitchen and make this, but all I have are split red lentils. Would those work?
@@beccogiallo red lentils cook quickly and the dish would be runnier- almost like a soup- but still delicious!
