    I love the philosophy of encouraging creativity and intuition over following a recipe. I’m a massive recipe following person but I can appreciate this approach. It teaches you to develop your own style.

    I like your reasoning why you don't give the recipes with exact details! Exactly, that is cooking and not just imitating. Get to know the ingredients and how they behave in conjunction with others. Keep it up!

    My chef said if you follow a recipe you’re only as good as that chef. You must experiment and fail over and over but you’re also learning and teaching yourself what works and what doesn’t 🙌🏾 I carry that philosophy with me when I’m cooking. Still read as much as I can but I continue experimenting.

    Chef Majk - I want to express my appreciation for how you address recipe vs cooking. I believe it's a gift of intuition - or painstakingly learned over many years. Some people have it - some don't. This is why some are "good" cooks who can follow a recipe - and others go on to become great chefs.

    Chef you are an amazing chef I am a chef myself in the best restaurant in my area and I agree with you 100 percent but you have taken me from a good chef to a great chef and I have take. Things I've seen from you tried to replicate them in work and tried and changed things and it has made me a great cook so thank you thank you so much for being you

    No conozco el nombre técnico de esta ballotine que en lugar de tener la farsa dentro, la tiene por fuera.... jajajajaja, quizás ballotine inverso.... jajajajaj. Pero la idea está genial, y el resultado es muy , pero muy atractivo y verdaderamente provoca deseos... es un llamado al apetito y que que nuestra boca salive.
    Admiro mucho los emplatados, muy finos y elegantes del Chef Majk, pero lo verdaderamente genuino de èl, es la combinación de salsas y cremas, como sus guarniciones. Es una joya disfrutar de la tecnica de sus elaboraciones.
    Y muy bien su explicación de las cantidades que no se especifican... no es dar o vender una receta... el objetivo es mostrar un ejemplo de como hacer... es una inspiración y un acicate a la pasión por cocinar y que sea un deleite el momento de ser servido con ese platillo.

    I don't know the technical name of this ballotine, which instead of having the sham inside, has it on the outside .... hahahahahaha, maybe reverse ballotine .... hahahahahahaha. But the idea is great, and the result is very, very attractive and really provokes desires... it is a call to the appetite and that our mouth salivates.
    I admire Chef Majk's very fine and elegant plating, but what is truly genuine about him is the combination of sauces and creams, like his garnishes. It is a jewel to enjoy the technique of his elaborations.
    And very well his explanation of the quantities that are not specified ... is not to give or sell a recipe ... the goal is to show an example of how to do ... is an inspiration and a spur to the passion for cooking and that it is a delight to be served with that dish.

    Hi, I really love your vedios. I have a question. do you have a recipe for how to use whole chicken? I will take chef exam end of Sep and they normally give us whole bird ( chicken, duck...) or whole fish and we must creat different dishes using the whole chiken or fish. I really apprechiate your help :)

    Just enjoyed a nice dinner, with your Chicken Ballotine as the main dish - this is really delicious - I wanted to enclose a little more meat inside, so I used 240g meat + a little more than 50g heavy cream (eye balled it). That made it easier to roll for me. I did not get a perfectly round shape as yours but that's what #lifegoals are for! ;-) THANK YOU, Chef! (I joined your Patreon site too)

    Would this work with salmon? Could you put a different kind of fish fillet in the center? Or would you need to encase the ballotine with a thin layer of puff pastry, like a Wellington?

      Did you try this with fish? I want to try it as well, but my concern is that fish will flake too much when trying to cut the log into cilinders.
