    I just wrote out the whole recipe & have it ready to make 1/2 of your large recipe or double your mini cake. On my sailboat oven I have 2 - 7" spring form pans, but in storage I have the 5" pan, so I'll have to use the 7" pan & double the mini cake recipe & make the whole batch of ganache to cover the cake. I may put my expresso chocolate pudding in the center❣🙆‍♀️ Talk about death by chocolate❣ I add chocolate chips to my dark expresso chocolate pudding ❣ This will be my hubby's new birthday cake 🥳 it's not everyone that can make it to 81 years old & not look their years❣🥳🙆‍♀️ Lol❣

    I tried a few different Ganache recipes out there and they were too sweet or too complicated, then stumbled on yours and it's the clear winner. So rich and decedent, and easy to make, its like cheating. I made a chocolate cake for my wife with this and she thought I was a wizard. ( I took all the credit, I hope you understand) Anyways, thanks again for the great video!

    The ganache consistency was amazing .I used cream with MF - 40%.It tasted slightly bitter so I added powdered sugar and it was perfect .

      Hi Pratiksha ! 40% cream is nice ! our standard here in North America is 35%
      Yes, if the chocolate you used is very bitter - it depends on the brand you use, and the cocoa content in the chocolate. The higher the
      cocoa content the more bitter it will be. I use a chocolate often that has 72% cocoa and it is more bitter than another brand I use that is rated at 54.5% cocoa. So you did exactly what I would have suggested.. just add a bit of powered sugar.

    Just found your channel on a mimi cake search. I cook for two so need small. Your mini chocolate mud cake is going to be hubby's birthday cake in a few days. He had a massive stroke and not eating much so hopefully the mud cake and ganache will do the trick. A few candles will make this cake look spectacular. Love your recipe style, subscribed. :)

I picked up all of the ingredients for the cake and ganache, just waiting for the 5x3 fat daddy cake pan from Amazon so I can bake on the 13th.     Howdy!! I just made this today and the chocolate ganache was awesome! I also made ur chocolate mud cake today and u were right...it sure is super moist. The only issue was that i was using a baking dish, so when i tried to invert it, the cake broke. What did i do wrong? .the taste was awesome, to say the least. Ur measurements are too good. Thanks for giving us ur recipes in different units like gms, cups, ounces so noone misses out! :))

      +Evaan Ahmed Hi there, yes indeed, you can use different types of chocolate.... you can mix semi-sweet and milk chocolate, or dark chocolate... whatever you think you will like, it will work very well. Thank you for watching.

    Ferensa Arnes Hi there, you must link your RUclips and Google Plus accounts together.... at this moment, nobody can directly reply to your comments. When making chocolate ganache, you need the heavy cream to make this correctly. IF you do not have heavy cream, you could try using 10% cream ( regular cream ) but do not use as much, so use much less, so that you have more chocolate than cream. You will want to add it a little bit at a time so that the chocolate does not become too thin.

      Blanquita Torres Hi there, yes you could use chocolate chips instead without a problem. I do have chocolate ganache recipes on my RUclips channel that use chocolate chips.     ***** Hi, whipping cream has 35% MF content, and heavy cream is the same, it depends on the maker of the cream, but heavy cream does mean whipping cream. If you see the "heavy cream" has a lower MF content, then it cannot be whipped. Some companies may label it as "heavy cream" but if it is only 20% don't use if it you need a recipe that requires whipping cream. ( MF = milk fat ) and is always listed on the carton of cream. So you may see 35% MF or 10% MF. 10% MF cream is the standard for use in coffee for example.

    Hello! First off, I wanted to say, that this cake is absolutely delicious and it was an absolute hit in my household. But as I am considering making it again, I wanted to ask if this ganache is good enough to be the chocolate cakes filling (like cream between the layers) or should I try to find a seperate recipe?

    Hello! You're mud cake is incredible!! I have a question on the ganache though... why butter? I thought ganache is simply chocolate and cream?

      Hello, this recipe contains butter, but my other ganache recipes you can see here on my channel ( I have many ) contain no butter. You can go either way. The butter makes it even more rich.

      keshia williams Hi Keshia, glad you enjoyed watching that video :-) Ganache requires heavy cream to give it stability, however that said, I get so many questions like this, so what I suggest is that you add only a tiny bit of your all purpose cream, so instead of doing a 1:1 ratio, you're going to use much more chocolate than cream. So instead of using 1 cup of chocolate and 1 cup of cream, I'd try using 1 cup of chocolate and only 1/4 cup of cream. Then, go from there, - if the chocolate is still too thick, you may add a bit of cream, about a tablespoon at a time. Do NOT go anywhere near that 1:1 ratio, or you will have chocolate soup instead of a ganache :-) Also, you can add some butter too, a few tablespoons, which will increase the fat content in the ganache and this will help.

    that looks amazing, but out of curiosity:
    why did you use the salted butter? doesn't it disturb the taste of the sweet chocolate or is it like the pinch of salt you mix in a cake batter?

      @blackVelvet Hi blackVelvet, thanks for watching. You may use unstalted butter if you wish, but salt always brings out flavors in everything, and the amount of salt in that small amount of butter will not be noticed, but it will enhance the ganache.

      Hi Angelus & Xena Adventure, first thanks for watching my chocolate mud cake recipe ! If you find your chocolate ganache is separating, you can add a bit more new chocolate to it, and make sure you do not add a lot of heat to it, a lower heat will help this. I would also suggest trying an electric mixer to whisk it together, it will really help with this problem. What type of chocolate did you use ? - and are you sure no water or steam got into your ganache when you made it ?       @@BakeLikeAPro thank you for your reply, i use dark 70% cooking chocolate (nestle) and use the low heat but maybe need to make it to the lowest next time. I end up with adding more whipping cream, its kinda save it but not look as good as yours, buts its still very yummy. My husband and friend all love it!     very nice. Can margarine be used instead of butter? I normaly use marg in my chocolate butter icing recipe as I find butter sickly.

      Del Shot Hi Del, unfortunately, margarine will not work. Don't try it, it will just not be good at all. If you really wish to experiment, then try it with a tiny bit of chocolate, so make 1/4 the recipe, and try it and see.

You may have a bit left over, maybe not, it really depends on how thick you want it, and - if you put some of the chocolate ganache in the middle of the cake. I hope this helps !     Hello again, l,ve made this ganache for your chocolate fudge cake,and this has came out really nice thanks but my question is. How many days can I have it at room temperature once the cake is fully decorated before having to place this in the fridge so the whole thing doesn't go off as this contains butter and cream thank you.

      +Ani Jaafar Hi Ani, you can without a problem. You must use good quality chocolate for it to melt correctly, so try it out with a small bit of your white chocolate to see if it melts well.       Yes you can use this to frost any regular or normal cake. IF the chocolate ganache does not flow easily, just heat it a little bit.
      You can heat it over a double boiler, or even use your hair dryer to heat it a bit.

    did you use whipping cream or heavy whipping cream? I couldn't found heavy cream. Can I use whipping cream?

      I used whipping cream. Whipping cream must be rated at 35% milk fat or more, - some countries will have it rated at 36% Look on the container to verify this. A side note - some will call whipping cream "heavy cream" but it is the same thing. As long as it whips it works well. IF - you cannot find whipping cream, I do have another recipe tutorial here on RUclips that shows you how to use 10% cream to make a very nice ganache. The measurements are different so this is important to note.

      +Alexa De la Peña you can maybe find it under "whipping cream" or "whipped cream" ... look for something that has at least 35% milk fat content. By the way, you can do this with 10% cream too.... I have a video recipe on how to do this on my RUclips channel.

      Hi Spoorthi, I use real chocolate. Please remember that *compound* chocolate is *not* considered real chocolate. It contains vegetable oil, which is not found in real chocolate. *Compound chocolate* is also known as a *candy* coating. That said, I use pure chocolate. Thanks for watching the mud cake ! I'm glad you enjoyed it !! 😁 P.S. - you can of course use compound chocolate for any frosting for a cake, and yes it will work in this recipe too, but in the end, it's not real chocolate.
