ETO (MASHED RIPE PLANTAIN)

INGREDIENTS
2 semi-ripe plantains
5 scotch bonnet pepper
1 small stinky fish (momone), charred.
1 small onion
2 eggs, boiled.
½ cup peanuts
½ cup palm oil
Pinch of salt
DIRECTION
- Place plantain on a chopping board , cut of the edges, slice , peel of the skin and cut into chunks sizes.
- Place saucepan on medium heat, pour water into it , add the plantains and cook for 5 minutes.
- Pour the pepper into an earthen ware bowl, add onion, salt and grind into a smooth mixture.
- Add charred stinky fish, grind , add peanuts and grind.
- Heat palm oil over medium heat then pour into the mixture in the earthen ware and mix.
- Add the cooked plantain and mash well to avoid lumps.
- Top it with eggs, peanuts and onion slices
- Eto ready to serve.
