I'm from Merida and I hope you enjoyed our local food! Although you missed a couple of staple food here like, Sopa de Lima, Relleno negro (which is made with a blend of literally burnt chilies), and Lechón. But who knows maybe you can try them another time if you happen to be here.
About the difference from the Tamales in Mexico city, here we call the one you ate as Chachacuá. The dough its mixed with rendered lard and achiote spice (hence the color and the texture). There is another type of tamal which is called Tamal Colado that is also very delicious and is typical from Tabasco, Chiapas, Campeche, Yucatán and Quintana Roo.
As for the Chicharra is better in a taco mixed with salad and sauce.
