    零失敗肉丸食譜 🫶🏻🙏
    份量約35粒
    1. 絞碎肉500 g
    2. 粟粉30g
    3. 泡打粉10-15g 「更彈牙」
    4. 雞粉8g
    5. 糖6g
    6. 胡椒粉適量
    7. 米酒5g
    8. 魚露8g
    🌟9. 冰粒50-75g 先落50g視乎肉質 攪拌時可再加少許水份
    10. 麻油少許
    * 如果肉漿會做不同口味
    可以分開份量
    再加入其他調味黑椒、冬菇、麻辣醬、花椒粉、辣椒醬、辣椒粉⋯⋯略拌
    👉🏻貢丸 可加炸蒜、冬菇粒
    👉🏻梅菜豬肉丸就要先將梅菜浸洗 切粒爆香 冷卻撈埋肉醬
    Fail-proof meatball recipe 🫶🏻🙏
    Approximately 35 pieces
    1. Minced meat 500g
    2. Cornstarch 30g
    3. Baking powder 10-15g "for extra chewiness"
    4. Chicken powder 8g
    5. Sugar 6g
    6. Pepper to taste
    7. Rice wine 5g
    8. Fish sauce 8g
    🌟9. Ice cubes 50-75g (start with 50g, adjust based on meat texture, can add a little water while mixing)
    10. Sesame oil a little
    * If making different flavored meat paste, separate the quantities
    Add other seasonings like black pepper, shiitake mushrooms, spicy sauce, Sichuan peppercorn powder, chili sauce, chili powder, etc., and mix lightly.

    做法:
    1. 將肉類、所有調味放廚師機「除麻油後下」
    2. 廚師機先低速拌勻調味 即中速6度約10分鐘
    3. 放入雪櫃雪1小時備用
    4. 準備熱水中火80度滾至有雞眼泡泡,手唧肉丸用匙羹🥄濕少少水防黏逐粒「筆」肉丸放煲煮
    用手指公食指的虎口位唧
    5. 肉丸煮約8-10分鐘
    6. 準備一盆冰水將肉丸過冷河,肉丸放到凍水會浮面,隔一陣沉底便可撈起
    🫡貼士:
    👉🏻如果碎肉狀況比較冰硬 建議解凍比較軟身 否則可能要打至13分鐘 另肉碎唔均勻易有肉粒
    👉🏻打發不要太長時間
    肉漿攪打過程中溫度升高造成乳化力降低
    所以先將碎肉冷凍降溫
    另控制煮丸水溫約80度左右都是可以提高成功率的辦法
    Method:
    1. Put the meat and all the seasonings into the cooking machine "except for the sesame oil"
    2. Start the food processor at low speed to mix the seasonings evenly, then increase to medium speed (level 6) for about 10 minutes.
    3. Put in the refrigerator for 1 hour.
    4. Prepare hot water, bring it to a simmer over medium heat until there are small bubbles. Wet your hands slightly with water to prevent sticking, then shape the meat paste into balls with a spoon and place them in the pot.
    * Use the part between your index finger and thumb to shape.*
    5. Cook the meatballs for about 8-10 minutes.
    6. Prepare a big bowl ice water ,put the meatballs cooldown
    the meatballs they will float and sink is done
    🫡 Tips:
    👉🏻 If the minced meat is too hard, it's recommended to thaw it a bit to soften. Otherwise, it might take up to 13 minutes to mix, and uneven minced meat may occur.
    👉🏻 Don't mix for too long.
    During the mixing process, the temperature of the meat paste rises, reducing the emulsifying power. So, freeze the minced meat first to lower the temperature. Also, controlling the water temperature at about 80 degrees Celsius can increase the success rate.

    想問大約打幾耐?高速?我打左30分鐘都打唔滑,仲有打打下d調味同牛肉分離,好奇怪,煮左係散嘅

      要用打丸既配件拍打 打麵圍的勾不能 小美不知道喔 你可以去返有關小美群組應該都有人用小美整丸吧🧐🤨
