This turned out really well, though I subbed green beans for the kale. Have you tried sprouting mung beans? They are really easy, I dont use a sprouting jar, but rather a medium mesh sieve (they drain better this way and less likely to go moldy). Google "Sprout People mung beans" and they have a great video on how to do it. Anyway, Mung beans are the unsung hero of the legume world, I agree. I love adding my mung bean sprouts to pad thai made with green papaya. Also, are you crafting? any macrame projects for the winter or something different? So many good tips here! I often cook squash stews but didn’t think to roast the squash separately! Such a great “why didn’t I think of that?!” idea! I also love that you don’t waste anything - the kale stems trick I learned from you from a video years ago and I still do it to this day! The same for cabbage leaves!
I made this tonight and it is absolutely delicious! I subbed sweet potato for the squash because it's what I had. The flavors remind me of a Pakistani restaurant I used to go to often that closed during Covid. I will make this again. Thank you!!

Looks really good! Why do you peel the squash though? The peel is perfectly edible and no reason to waste it if you don't plan to make a smooth soup :)
