How to make a PERFECT baked LOTUS BISCOFF Cheesecake! 🍰

  • Lotus Biscoff lovers! Here’s something that I’m so excited to share - the best Lotus biscoff cheesecake recipe ever!
    It is very creamy, smooth, tender, moist and layered with Lotus in every bite! Yes, I’ve got crushed Lotus biscuits in the crust which is so crunchy, another creamy Lotus in the filling, melted spread on top and decorated with a halo of Lotus crumbs to top it off. The combination of cream cheese and Lotus biscoff is absolutely delicious!
    I have painstakingly took lots of testing to create this perfect recipe so I can give you the best tips to ensure you can recreate this to perfection right in your own kitchen!
    Although it demands a very meticulous attention, you need to be very careful following each step to avoid cheesecake to puff up, sink, or crack. Be mindful of the timing and right amount of ingredients and do exactly as I put out in this video and there’s no doubt you would be able to come up with a perfectly baked delicious creamy cheesecake.
    INGREDIENTS
    ➡️Crust
    250g Lotus Biscoff biscuits, crushed
    70g unsalted butter, melted
    ➡️Filling
    600g cream cheese - full fat
    100g sugar
    200g sour cream - full fat
    200g white chocolate, melted
    200g Lotus biscoff spread
    3 eggs, large
    15g cornstarch
    1/4 tsp salt
    1 tsp vanilla extract
    ➡️Toppings
    200g Lotus biscoff spread, melted
    50g Lotus biscoff biscuits, crushed
    NOTE: Make sure all of your ingredients are at room temperature

    I tried this today and it just turned out amazingly perfect
    I did a few Changes though
    I didn’t add the white chocolate . However I felt since I scrapped it ,I should have reduced the qty of the sour cream. I’m someone who likes less tangy taste to the cheesecake, my family feels otherwise. So they felt it was as perfect as sold in pastry shops
    I also didn’t let it cool in the oven for one hour. Post baked. Instead I took it out and kept it under the fan so that it cools faster. I kept it out for 30 minutes then 30 minutes in freezer. Though I didn’t want to do it this way, but since I wanted it to be ready by 12 midnight for cake cutting, I chose the easiest way out. We had small bites and then cake was back in refrigerator for the night. I can’t believe how fool proof this recipe is. Thanks for an amazing video

    I have now made this 3 times and it's a total winner. The filling texture us beautiful. I'm going to use the base recipe for an oreo cheesecake (omitting the biscoff) wish me luck... doing it right now... aaahh

      Hi Nahdia, For 6inch pan, just divide the recipe quantity in half. Bake for 40 minutes and then turn off the oven without opening the oven door. Let the cheesecake cool in the oven for another 40 minutes.

    I made this cake yesterday and I got a big crack in the middle. I made it 7 inches and cooked it in a water bath for 40 minutes. My question is how long do I keep it in the oven with the oven off….. 40 minutes or one hour? I haven’t tasted it yet but I’m sure it will be delicious anyways.

      Hi, I have not yet tried to make cheesecake without baking in the oven. I have done a no-bake cheesecake but that was a different recipe. Sorry i cannot answer directly your question. If you decide to experiment making cheesecake over steaming process. please let me know how it goes… 😊

      Yes, but there’s a possibility that the cake may crack during baking. It will still taste delicious though. After baking, just let the oven door open slightly and allow the cake to cool in the oven for another hour. If ever the cake cracks, it will eventually get covered when you top it off with melted biscoff.

      Hi Indra, i only use the bottom fire for my baking. Don’t worry even you use plain yoghurt the taste & texture will still be okay. You may not notice the difference.

      Plain yogurt or heavy whipping cream can be used in absence of sour cream. You may substitute with an equal amount.

      Hi, Reiko, If you use 8 inch springform pan, you can multiply this factor 0.790 in each ingredients to get the right proportion. As for the baking time, it should be a bit less for about 15-20mins just keep an eye on the cake. Just do the visual confirmation. I hope this helps.

      Hi Sharma, I have seen some who successfully baked cheesecake in a loaf pan, but I haven’t tried it myself as I would always bake my cheesecake in a springform pan. Unfortunately i cannot give you the right measurement of the recipe. If you decide to experiment, please let me know how it goes. 😊

    I made it multiple times so delicious, but yesterday I baked it and it cracked through the top. And I remade it again today same thing? You know why it would happenv

      Cracks occur in cheesecake when they’re over baked or over mixed. Avoid over mixing as it incorporates too much air which makes the cheesecake rise during baking & collapse as it cools down.
      Over baked if the cheesecake was baked too hot. Next time, try to reduce the baking time by 10 minutes and once baked, turn off the oven and slightly open the oven door and leave the cake inside for an hour.
      Also it’s better if you have oven thermometer as it gives more accurate temperature reading of the inside of the oven.

      This one is basically a REAL cheesecake. The non-baked cheesecake is a fake cheesecake. You can't technically call anything a "cake" without adding flour and eggs. It's simply a new propaganda people started doing because they're lazy and can't bake for shit.

      No they are not the same thing. They both differ in nutrient profile, uses, gluten content and flavour. Corn flour has an earthy, sweet taste similar to corn while cornstarch is flavorless, it adds texture rather than taste to the dishes. Both may go by different names depending on where you live. Adding small amount of cornstarch help makes the cake more firm and stable. Hope this helps.

      No they are not interchangeable. You can omit cornstarch if you don’t have one.

      Hi, I would not replace the white chocolate with sugar. You can replace the white chocolate with an equal amount of milk chocolate.

    Recipe is nice but gives feeling of incomplete.instructions are not given.it’s baking if something doesn’t work then all is in vain
