  • Fistulina hepatica (beefsteak fungus, also known as beefsteak polypore or ox tongue) is an unusual bracket fungus classified in the Agaricales, that is commonly seen in Britain, but can be found in North America, Australia, North Africa, and the rest of Europe. As its name suggests, it looks remarkably similar to a slab of raw meat. It has been used as a meat substitute in the past, and can still be found in some French markets. It has a sour, slightly acidic taste. For eating it must be collected young and it may be tough and need long cooking. NEVER EAT A MUSHROOM YOU'RE NOT 100% SURE OF

    Thank you so much for sharing! This is the best recipe I've seen as a vegan (vegan milks don't do anything to sauer flavours), I'm using it for the huge specimen I found, though I am debating cooking it multiple ways.
    In German it's most often called a "Leberreichling" or "Liver-rich-one" they have "Ochsenzunge" too, but it's a mostly unused neologism.

    I find them quite often and I season them like you would a steak. I also give it a few drops of liquid smoke and some Worcestershire sauce. Delicious 😋
