  • Inspired by ‪@gazoakleychef‬ to try some meat free cooking, here's a recipe to cook beefsteak mushrooms (hepatica fistulina), they're an excelent alternative to meat. They do have a distinctive taste and are easy to identify.

    Hi, try caramelizing your onions first then adding minced garlic when it’s nearly done releasing its water. This is so you don’t burn the garlic. Depending on the firmness of mushroom season and sautee in some broth and cover and simmer depending on how soft you’d like it. Then take off lid and reduce the water and you are left with perfectly browned onions and flavorful mushrooms. Perfect for pasta.

    Monty, drying your own herbs is so easy! I have a big kilner jar that I have been adding to over the summer; oregano, sage, thyme, a little mint and bay leaves. Now we have enough to last us through winter and they must be saving us a fortune!!! I love a mushroom pasta, yum 😋

      Another good way of preserving herbs is to chop and blend them with a hand held blender and add olive oil. Pour the mixture into ice cube trays and freeze. You have fresh herbs for cooking all year round.

    Just found a prime beefsteak today in the forests of western North Carolina. Fried green tomatoes is a staple in our region. Looking forward to trying this recipe. Thanks for the clip!

    This sounds great. I have a forage with some friends coming up, as homework for a course we did together. I'll have a look for a couple of beefsteak mushrooms to give this a go. I also like that you show people the safe mushrooms that can't be easily confused for other, possibly harmful species. I have quite a bit of foraging experience, but I 've been a bit reluctant to show people mushrooms, in case they misidentify them when I'm not there. Of course, there are enough that can't be mistaken for other things, so I'm going to take your lead and start with sharing this knowledge.

    Went for my first mushroom forage today (been postponing for yéárs), and found several of these massive fungi.
    Thanks for the cooking suggestion.
    You've inspired me to try make 'meatballs' - squashed ones like thick mini pancakes, or flat falafel. Or i may just cook all to spreadable consistency and dehydrate them; will be interesting to see what they're like as 'crisps'.
    Wondering if, beside onion and garlic, dried milled coriander seed would be good to add, and a touch of cayenne. Maybe a teeny bit of sage. And fresh holy basil, dill, coriander and parsley. And chick pea slosh 'base' to thin the flavour of the Fistulina. For crisps anyway; for falafelly effect i'd use home soaked, cooked and lightly minced chick peas and coat with lightly spiced amaranth flour.
    I heard that olive oil is not for cooking with; carcinogenic (your friend at avantgarde vegan might agree?). Instead i'm using sesame oil.

    I have a 98% plant based lifestyle the 2% is for when im not well and Tanny has to cook and bless him he just doesn't understand. I totally adore mushrooms I'm hoping to be growing my own not too far in the future because I live on them literally lol. This looks great I'm putting it down as another variety to look for.

    I got a Beefsteak fungus today from an Oak tree , looks so much like Wagyu beef. looking forward to eating some again as its been over a years since the last one i found .Glad you enjoyed it with the blessing .
