  • Karumeyaki, known in Western countries as honeycomb toffee or sponge toffee, is a sugary toffee with a fluffy, sponge-like texture. It is made by heating a mixture of brown sugar, sweet syrup and water, and then adding in baking soda to cause the toffee to rise and set.
    In episode 27 of Sweets Tales, we visit a street seller in Tokyo who has karumeyaki-making down to a science.
    Sweets Tales is an original documentary on Japanese wagashi sweets and the people who make them.

    I came here after watching Atashinchi 's episode. It's really nice and the lady 's voice is so calming. The father and daughter are so cute. Hope they are doing well. 💙🌻

    this is like a recipe I sometimes made with my mum as a kid, and it was common at bake sales and things, we called it hokey pokey though, but it was they same idea of hot sugar/toffee expanding to make a honeycomb-type texture. So cool! (I'm from New Zealand)

    Looks yummi. I never tried the Japanese version. I make mine with salted peanuts in it. Soo good

      Laurimar Perez keep them wrapped in wax paper and in an air tight container in a cool place.

      Its taste like crunchy caramel and bit better because of sugar burned.
