I put on beautiful meals and packed great lunches for my husband. Then would freeze the rest for another meal. We ate very well, and I my husband would call daily, to ask what was for dinner ❤

This looks similar *Swedish Meatballs:* 2 beef bouillion cubes 1-1/2 cup Boiling Water-Divided 1/3 cup All purpose flour 2 teaspoon instant coffee 1/2 teaspoon allspice 1/2 teaspoon nutmeg 1 cup half-and-half 1 tablespoon Lemon juice In a skillet dissolve bouillon cubes in 1 cup boiling water. Add meatballs and simmer covered for 15-minutes. Blend 1/2 cup water, flour, and coffee. Stir into meatballs. Add allspice, nutmeg and cream. Cook uncovered over low heat. When thickened stir in lemon juice. Serve over egg noodles.

Looks positively delicious. I don't freeze potatoes though because they wind up with a mealy texture. I'd just cook them fresh when I use the frozen ones.
You can freeze potatoes after they are cooked. I did a whole bushel once when we had all three children at home. Used red potatoes, cooked them in the peeling (used a big pot and cooked 3 different batches) peeled the potatoes and placed in quart freezer bags then mashed flat for easy storage in the freezer. When ready to prepare for a meal I thawed and squeezed out the water which had come out of the potatoes during the freezing process then heated in a pot with butter, used the electric hand mixer plus added cream and I can tell you they were the best creamed potatoes I ever tasted. I understand what you meant about being mealy but heating and using the mixer reconstituted them nicely - no mealy texture. These potatoes could only be used for creamed potatoes. This little trick helped me to feed 3 hungery teenagers, they always wanted creamed potatoes with every meal.
Those gravy and meatballs look delicious!. I'm going to check out our Walmart here in California to see if they carry ground chuck. I've never bought meat from Walmart. Now, I got a good excuse to go! Have a good evening Ms. Phyllis.

Hi, Phyllis It just so happens that I lots of ground beef in my freezer. So I'm going to make the meatball stew too. I was just glued to the screen. Flouring the meat balls, is new to me but I love the way the meat made the beautiful gravy. Thanks Rosemary in Seattle

Love your recipes !! I'm always looking for something new to cook. And I have tried several of your recipes and they turn out delicious !!/:P I just wish you would do a wider zoom out on your camera so that we could see more of what is going on.
My camera is about 7 years old and doesn't have a lot of fancy functions. I can zoom out but then the picture is not as clear. I also do my own filming using a $15.00 tripod - so you can see I probably do need help and maybe a new camera.
LOL !! I completely understand. I have a camera that was given to me about 5 years ago and I still haven't figured it out and I bought my tripod at the Salvation army for about $3. I only take still pictures and without the tripod they are blurry because of my bad shakes.
Phyllis, Phyllis, Phyllis! Why do you tempt me me with such delights. You know I am not a big meat eater, but being a flexitarian and all, this looks like something I would love to try. Phyllis -- I have a question. I made the meatball stew and put what we didn't eat in 6 cup freezer containers but when I took one out of the freezer to fix it, and I did microwave it, it was just not good at all! I was wondering how you warmed yours up after you have put it in the freezer. I did have to add some water to reconstitute the gravy but the half & half seemed to have separated. Please tell me how you warm up your leftovers. Thanks! Suzanne in Safety Harbor
I usually have the microwave on the defrost setting and after it thaws about half way then transfer to a pot on the stove. You would probably need to warm it slower to prevent the half n half from separate. Even if it separates it should not have affected the taste.
Phyllis Stokes yes it was still very good. I did have to put almost a cup of water in to dilute the gravy a bit. I still have one more in the freezer so I’ll try it this better way. I really appreciate your inspiration to rejuvenate the meals we grew up with. And the meals for two are just perfect for us. And Jello! I had just about forgotten about Jello! We have really enjoyed “rediscovering” Jello!!
We have the green smoothies every morning, since they contain so many fruits, vegetables, whole grains, nuts and/or peanut butter we just do not get hungry before about 3 in the afternoon. The meal at 3 is our main meal of the day and then maybe we have a little snack at around 7 or 8 in the evening.Sometimes this late snack is just a small bowl of cereal with fruit.
Do not want to sound like a know it all, but 25 yrs standing in front of those big grills taught me those little tidbits and goodies in the pan are called "fond".

I forgot to ask you, after thawing the frozen product, does the gravy hold up? Is it still thick or does it go thin? My mouth is watering 🦋💜
The gravy will separate but it goes right back together when heated.

Why is all the food so grey? I don't understand how that's even possible. It looks like it belongs in Tim Burton's "Oliver Twist".
The gravy is a light brown, nothing is gray. You might need to check the color scales on your computer.
