The broccoli, cauliflower and red bell peppers were bought by the bushel at our state farmer's market cooked and then frozen in meal size containers. I simply took them out of the freezer, thawed on the counter, and rewarmed in the microwave. This is how you can get very cheap vegetables that are very fresh when you freeze them. The broccoli and cauliflower were cooked in boiling water in a very large pot for about 5 minutes then cooled packed into freezer cartons and frozen. Hope this helps.

Dear Phyllis in heaven, these videos still bring me great happiness. I am surprised at what you have in the USA that we don’t have in NZ. I never have heard of tenderiser . We cook a roast in the oven with dripping and make delicious gravy. In 1962 just married, one Sunday morning we slept in. I leaped out of bed and put a salted corn beef in the oven to roast. It should have been put with water in a pot to simmer on top of the stove. It was totally inedible. I was mortified and my darling young husband was very cross. I can laugh now. Learning to be a good cook takes time and careful preparation. 😊
I'm not a huge fan of cauliflower but I would eat it this way, with the broccoli and the red peppers. That chuck roast looked delicious--good enough for Sunday dinner. You have the coolest style when it comes to cooking; laid back and not too fancy. I just can't watch those fancy cooks. The food doesn't look that appetizing. But, man yours does!
The way you explained how the bread will smell, the air bubbles, etc. Reminds me of the delicious homemade rolls we had in our school lunches. Back then, our meals were homemade by the cooks. Lunch smelled like heaven and we were famished when time came to eat. Cinnamon roll and chili days were the best! My mom was a cook at the high school. I only went through middle school in that small town. When we moved to capital city, our meals were mostly precooked foods and not nearly as good. I sure miss the smell of that home cooking.
Phyllis you are still teaching all of us even tho you're gone from this earth. I use gloves for mixing meatloaf, or handling any raw meats. I buy my gloves at the beauty supply store! I love chuck roast. I always have some in the freezer. I use an electric pressure cooker to make mine. Very flavorful and cuts down on time and without heating up the whole kitchen with the oven. This dinner looks so much like a Sunday supper you would make after chuch. #love it, #love roast, #love homemade. Yummy.

Thanks for your quick reply! we live and we learn. At 67 I'm still learning. I don't buy ground beef. I buy the chuck roast, rinse it and grind it myself (as per Mam) lol. People always tease me about how long it takes me to cook because my Mama was a germaphobe and so am I. A spray bottle of bleach along with gloves lives in my kitchen. God bless you

I came home from Jamaica and my husband went an bought a new stove (not like we need one) it has a bread proof button. I have a hissy fit because I said I won’t ever use it...I was so wrong. I love it and I use it all the time.
miss phyllis you are so clean & meticulous with your cooking housekeeping, & your food so fresh & you all live & eat so healthy-i cant imagine how or where mr bucky got food poisoning! do you all ever eat out? maybe it was eating something besides your good cooking! so sorry though & know he was so so sick! terrible! but thank God he is well & got over it,recovered like he did!
He got food poisoning from a chain pizza place where they had a salad bar and lots of little kids running around everywhere. He got sick from pasta salad on the salad bar, that's the only thing I did not eat but he ate a large plate full. Ten days in the hospital and he lost 40 pounds, had to take special medicine that cost $300.00 per pill. He caught c.difficil toxin B the worst kind you can get. Needless to say we have never eaten from a salad bar since then and probably never will again.
Sorry for Mr.Bucky's getting sick. I too like how meticulous you are in the kitchen. I have seen food videos-even on Food Network where they handle raw chicken, beef and fish etc.-then open the oven or fridge-cannot stand that-even if it is just a show. Thanks.
@@PhyllisStokes Miss Phyllis sorry about Mr Bucky I know this has been a while so I am sure he is ok now, but I just have to comment about the C-Diff back in 07 when I had breast cancer my Momma Macie (a lady from church like my mother, my Mommy passed in 98, had just had a major stroke and we were the only family she had she she came to live with us, I had just recovered from major chemo and a total radical mastectomy and was taking radiation, the radiation had burned the area and I looked like a piece of raw meat in that area, well Momma Macie got C-Dift from the hospital and her dr said she could not come home with me that if I got it it would kill me with my immune system compromised so much. She said hes would have to go to a nursing home. I could not even imagine that happening to her so I asked my sister-in-law if she could come and help me and she did she kept me in one end of our house and Momma Macie in the other taking care of her and then me, gowning and gloving up each time she entered my room, the reason for my story is to explain that they had prescribed antibiotics and a probiotic for her and she was not getting better or rid of the C-Ciff, I went online and researched and on one of the groups I think Web Md I asked the question on the C-Diff page how to get rid of it and someone answered back that they had used the probiotic FLOXIN I called our pharmacy and he ordered it in and got it the next day it was a little pricey but that did not matter. I started giving it to her that day and 3 days later her stool tested negative. I was so thankful for that it had been over 6 weeks she had it. As soon as she tested negative I was able to come back into her room, my sister-in-law had cleaned with bleach from top to bottom and used gloves. It is pretty scary I had never heard of it. The FLoxin puts back the good bacteria into your intestines you need to fight the C-Diff You do have to take it at a different time as the antibiotic for it's maximum effects. Momma Macie lived with us for 6 years before she passed @ 92 she was not able to take one step without our help but I would not trade those 6 years for anything she was an amazing woman and we miss her every day. Every time she was put on antibiotic after that I put her on Floxin I have read that C-Diff can be in your intestines and when you are on antibiotics the antibiotic kills bad bacteria but it also kills your good bacteria and C-diff can grow. The Floxin puts back the good bacteria and kills the C-Diff Sorry this was so long but as you well know C-Diff is somethign I wouldn't wish on anyone, it can be deadly. I am so badly scared of it I do wipe down the shopping carts at the grocery store especially where people set their babies in the little seat and also the handle where people would handle and maybe not wash their hands.

Looks delicious. I had surgery once at Johns Hopkins Hospital. For years after that. Every now and then I would get a peace of food or meet caught in my stomach. I could not throw it up or pass it though. The doctors told me to add some meat tenderizer to warm water and drank. The meat tenderizer would desove the food or meat in my stomach. A person has to wonder if used the meat tenderizer a lot. What would it do to your insides.

Wow phyllis you need to visit Dollar General the have boxes of gloves 50 for just a couple dollars. I use a lot of these gloves myself especially in the summer when I cook outside on the grill because I cook more meat on the grill .

Phyllis is there a reason why you didn't rinse the meat off first? I always rinse and pat dry with a paper towel and then stuff with garlic. My Mama told me it had to be done that way. Let me know. God bless you.
Any germs that might remain on the meat will be killed during the cooking process. Washing the meat spreads contamination on the sink, your hands and where ever it touches including the flour it was dredged in. How would you wash hamburger? it's the same meat and probably has a lot more germs. The worst offender would be chicken, everything has to be cleaned and disinfected after washing chicken. The goverment has a report about washing meat.

When we were purchasing carrots in bulk I actually blanched or partially cooked them before freezing. It's hard to freeze most kinds of vegetables without blanching them to stop the enzyme action that would eventually cause them to spoil after a month or two.

WOW Miss Phyllis I am so glad to know how to freeze a large pepper I never froze them large before because I don't like the peeling, I have let so many go to the garbage from my fridge because of the I would have froze them if I had of known this about peeling them, this is amazing you are so kind to share your knowledge with us, I have learned so much from your videos and I wish I could have started a long time ago so I don't have so many to catch up and learn

Thanks for your quick reply! we live and we learn. At 67 I'm still learning. I don't buy ground beef. I buy the chuck roast, rinse it and grind it myself (as per Mam) lol. People always tease me about how long it takes me to cook because my Mama was a germaphobe and so am I. A spray bottle of bleach along with gloves lives in my kitchen. God bless you

I came home from Jamaica and my husband went an bought a new stove (not like we need one) it has a bread proof button. I have a hissy fit because I said I won’t ever use it...I was so wrong. I love it and I use it all the time.
miss phyllis you are so clean & meticulous with your cooking housekeeping, & your food so fresh & you all live & eat so healthy-i cant imagine how or where mr bucky got food poisoning! do you all ever eat out? maybe it was eating something besides your good cooking! so sorry though & know he was so so sick! terrible! but thank God he is well & got over it,recovered like he did!
He got food poisoning from a chain pizza place where they had a salad bar and lots of little kids running around everywhere. He got sick from pasta salad on the salad bar, that's the only thing I did not eat but he ate a large plate full. Ten days in the hospital and he lost 40 pounds, had to take special medicine that cost $300.00 per pill. He caught c.difficil toxin B the worst kind you can get.
Needless to say we have never eaten from a salad bar since then and probably never will again.

Sorry for Mr.Bucky's getting sick. I too like how meticulous you are in the kitchen. I have seen food videos-even on Food Network where they handle raw chicken, beef and fish etc.-then open the oven or fridge-cannot stand that-even if it is just a show. Thanks.

@@PhyllisStokes Miss Phyllis sorry about Mr Bucky I know this has been a while so I am sure he is ok now, but I just have to comment about the C-Diff back in 07 when I had breast cancer my Momma Macie (a lady from church like my mother, my Mommy passed in 98, had just had a major stroke and we were the only family she had she she came to live with us, I had just recovered from major chemo and a total radical mastectomy and was taking radiation, the radiation had burned the area and I looked like a piece of raw meat in that area, well Momma Macie got C-Dift from the hospital and her dr said she could not come home with me that if I got it it would kill me with my immune system compromised so much. She said hes would have to go to a nursing home. I could not even imagine that happening to her so I asked my sister-in-law if she could come and help me and she did she kept me in one end of our house and Momma Macie in the other taking care of her and then me, gowning and gloving up each time she entered my room, the reason for my story is to explain that they had prescribed antibiotics and a probiotic for her and she was not getting better or rid of the C-Ciff, I went online and researched and on one of the groups I think Web Md I asked the question on the C-Diff page how to get rid of it and someone answered back that they had used the probiotic FLOXIN I called our pharmacy and he ordered it in and got it the next day it was a little pricey but that did not matter. I started giving it to her that day and 3 days later her stool tested negative. I was so thankful for that it had been over 6 weeks she had it. As soon as she tested negative I was able to come back into her room, my sister-in-law had cleaned with bleach from top to bottom and used gloves. It is pretty scary I had never heard of it. The FLoxin puts back the good bacteria into your intestines you need to fight the C-Diff You do have to take it at a different time as the antibiotic for it's maximum effects.
Momma Macie lived with us for 6 years before she passed @ 92 she was not able to take one step without our help but I would not trade those 6 years for anything she was an amazing woman and we miss her every day. Every time she was put on antibiotic after that I put her on Floxin I have read that C-Diff can be in your intestines and when you are on antibiotics the antibiotic kills bad bacteria but it also kills your good bacteria and C-diff can grow. The Floxin puts back the good bacteria and kills the C-Diff
Sorry this was so long but as you well know C-Diff is somethign I wouldn't wish on anyone, it can be deadly. I am so badly scared of it I do wipe down the shopping carts at the grocery store especially where people set their babies in the little seat and also the handle where people would handle and maybe not wash their hands.

Phyllis i love your videos you should have your own cooking, i wanted to comment on the video where you smoked the pork roast, i live in wv and when we have pork bbq its always this sweet tomatoe based barbeque, i hate it , i love the carolina style with the vinegar in it, and thanks for finally showing me a brand of mustard based barbeque sauce, its hard to find in the grocery stores here like food lion and shop and save, i never shop for groceries at walmart, but come to find out they have it , i donot like the really sweet tomatoe barbeque sauce . ohh and how to i use a grill as a smoker

300 degrees for maybe 4 hours and then took the lid off and allowed the roast to brown a little at 375 degrees.

Looks delicious. I had surgery once at Johns Hopkins Hospital. For years after that. Every now and then I would get a peace of food or meet caught in my stomach. I could not throw it up or pass it though. The doctors told me to add some meat tenderizer to warm water and drank. The meat tenderizer would desove the food or meat in my stomach. A person has to wonder if used the meat tenderizer a lot. What would it do to your insides.

Wow phyllis you need to visit Dollar General the have boxes of gloves 50 for just a couple dollars.
I use a lot of these gloves myself especially in the summer when I cook outside on the grill because I cook more meat on the grill .

Phyllis is there a reason why you didn't rinse the meat off first? I always rinse and pat dry with a paper towel and then stuff with garlic. My Mama told me it had to be done that way. Let me know. God bless you.
Any germs that might remain on the meat will be killed during the cooking process. Washing the meat spreads contamination on the sink, your hands and where ever it touches including the flour it was dredged in. How would you wash hamburger? it's the same meat and probably has a lot more germs.
The worst offender would be chicken, everything has to be cleaned and disinfected after washing chicken. The goverment has a report about washing meat.

hey Phyllis, how do you keep your carrots so long? (I know you said they are frozen...) do you just put the whole bag in the freezer? or do you individually package them? thank you! love your videos! :)
When we were purchasing carrots in bulk I actually blanched or partially cooked them before freezing.
It's hard to freeze most kinds of vegetables without blanching them to stop the enzyme action that would eventually cause them to spoil after a month or two.
