    Hello friends and welcome to Frugal Fit Mom! What's for dinner this last week? Cook with me to see what our large family eats on a budget!
    Potato Casserole
    30 oz. bag of shredded hash browns
    1/4 cup melted butter
    1 can cream of chicken soup
    1 1/2 cups sour cream
    3 green onions, chopped
    2 C. cheddar cheese
    salt/pepper to taste
    1/2 cup crushed ritz
    mix all except ritz and 1 cup of the cheese together in put into a 9X13 pan. Bake at 350 for 30 minutes, add the rest of the cheese and crackers and bake another 10 min.
    Add ham to make it tastier!

    We don't eat meat in our house but I'm so impressed with how many beans and legumes I've seen in your recipes. I think a lot of people neglect an entire food group!

      We eat meat but not a lot of it, so I'm well used to using lentils, beans etc but good point

      Exactly! I've been vegetarian 11 years and I rarely ever have beans. This reminded me that my diet is definitely lacking.

      A lot of budget cooking videos also skip potatoes, like whaa?? They're the most perfect food and super cheap and easy.

      diet culture makes people afraid of carbs when stuff like beans and lentils and potatoes are lifesavers on a budget, and tinned fruit can be super cheap

      We’re a household of six (+ five grandkids that are over at our house at last 5-6 days of the week). I’m the only one who doesn’t eat meat, fish or dairy, but I still prepare my family’s meals. I just found her channel and I really like how easy it is to make a lot of her meals plant based 😋🌱

      I guess since she's a self-proclaimed frugal mom and works from home that 2020 hasn't hit her that hard, hopefully. Also, many youtube channels benefited from people staying at home and having more free time.

      @@Saturn57 I'm guessing your new here? Christine is definitely frugal from all the years I've been watching her channel. 😂
      Last year she had several deaths in her family back to back and that was what I was referencing above. 💔
      Earlier this year she had a viral video and her channel blew up overnight and we are so happy for her. She's been doing this channel for years with little recognition and I'm guessing even less pay while working several side jobs (babysitting, teaching etc). Hard work pays off! 💗

      @@amilawstudent no I've been here for a while 😊 English is not my first language but I still know that "self-proclaimed" does not have negative connotations (I was referencing the title of her channel). Her video going viral is one reason her channel grew and another one is the virus and people having more time and being interested in frugalism. You're right about the deaths in her family. I said she's working from home and that includes babysitting and the other jobs you mention. That said, she hasn't been doing any other jobs recently, has she? Finally, you took my comment way too seriously. I was just confirming the wishes that the year didn't hit her as hard.

      I lost my mom, my daughter and my uterus all suddenly and unexpectedly in 2019. Lots of tears. Such a toughy.❤️💔❤️

    I absolutely love that you're doing recipes again because I have to cook almost every night and sometimes to be honest I just get so sick of my own ideas and I need a little bit of inspiration and though I always change things up to my family's taste it's nice to get some new recipes in the repertoire.

    Sorry to hear about the bad things. It’s eleven years later and I still am struggling with all the negative fallout from my ex walking out on me and my daughter. I pray for her daily. She’s so messed up mentally and tells me all the time how it messed her up. Breaks my heart that bc I wasn’t good enough to keep him home - my poor baby is suffering. I guess I’m the opposite. I’m alone and need to talk about it. The burden is too heavy alone. I hope you all have peace.

    I mix breakfast sausage with ground beef and use it for marinara used in my lasagna... soooo delish!!

    Oh and I like to fix whole roasted chicken. I can get 3 dinners and 2 lunches - first night is the chicken, roasted vegetables, muffins, homemade cranberry sauce. Second night is chicken taco salads. Third night is soup and I use the carcass for the stock!

    I absolutely love fajitas. I like to add jalapeños. I also like to eat my fajitas in a bowl but I like to add rice cauliflower rice, sour cream, cheese & guacamole it’s so good!

    If you have a food processor that has a slicing blade throw the brussels sprouts through that it’ll be way faster

    Love these recipes!! I’m only cooking for 2 for now, but affordable meals that keep/freeze a while are always needed. Also, praying for your family! Last year was rough on us as well. Praying that season is over now! ❤️

    You should try adding a glug of Worcestershire sauce to your shaved Brussels Sprouts and bacon. Let it cook down until it’s stodgy and caramelized. YUM!!

    If you don't have a blade for the mandolin for small items use a fork believe me you don't want a cut from that. Hope you had a fab Christmas and new year lots of love from the UK.

      Marie Ince I may be wrong, but I believe her glove was a special glove meant to use for protection against cuts with sharp knives. My mother has some for her job at a meat processing factory.

    Poor baby! I hate those tummy bugs. Hope he feels better soon. Those fajitas looked so good. I made hamburger helper cheeseburger macaroni from the box last night. First time in years and for some reason it was so good.

    Last years was brutal for me as well. So hopefully this years is a great year. I lost both my parents within one month. It has to only be better. I am totally making these sheet fajitas!!

      I prep mine the night before and toss them into a ziploc bag with the seasoning so I can mix everything. Store them overnight and dump them on a baking sheet the next night to bake. Super easy.

    I just made the Sausage and Bean Ragu from this video and even though I wanted to make it exactly how you had it written i had to make a few changes because I didn't have the exact ingredients in my cupboard and fridge like I thought I had. I used penne pasta because I needed to use it up and I thought I grabbed hot sausage and it was just the regular breakfast sausage, I thought I already had cannellini beans in my cupboard but it turned out to be garbanzo beans and I swear i had red chili flakes in my spice cabinet and I couldn't find them. I thought I could use a few dashes of that since i didn't buy the hot sausage but noooo i didn't have any. Lol. Ugh! But, I made it work with what I had on hand because i refused to run to the store because I know that I wouldn't have been able to buy just the missing items I would have ended up buying other junk I didn't need. I'm terrible. Lol. But all in all I think it still tastes really good. Next time though I will have all the correct ingredients.

    Awww man you gotta get some brown on those sprouts baby. Mmm mm mmmm! Add about a tablespoon of brown sugar in the last stages of cooking to glaze them😙👌🤚

    I would like to share my tip for cooking with ground beef/chicken, or sausage meat ;
    Soak porridge oats with water, and mix 50/50 with the meat in a large bowl.
    Add one finely chopped ( fried ) onion, one egg, salt and pepper, plus seasoning to your taste.
    The flavour of the meat will be absorbed by the oats.
    Great for meatballs, burgers, meatloaf, and simply fried ground beef for pasta sauces or oven dishes. 😀

    Carrots and oranges make a great juice! I buy it from Jamba sometimes (so expensive!). The carrots sweeten the mix.

    Our house likes shredded Brussels sprouts with chopped onions, shredded carrots, and chopped bacon. (1 lbs Brussels sprouts, 1 large onion, 3 medium carrots, and 4-6 bacon slices depending on size)

    We have a ruby red grapefruit tree in my backyard I make fresh juice daily 😊You can also make a delicious sweet cucumber water .. add one chopped cucumeber peel and all with a few cups water in a blender and mix into a puree .. strain the mix .. then add one or 2 cups of sugar and additional water to make a gallon .. Its delicious fresh flavored water ..

    Beans really do help stretch meat! I like to add black beans to ground turkey. I love to add shaved brussel sprouts to stir fries. And props to you for keeping family stuff within your family. So many youtube channels way over share and I feel bad for their kids. They have no privacy.

    That's a cut glove. It's meant to keep your fingers safer from a blade, but it's not 100% safe. Some blades like that mandolin will definitely cut through it if you get enough pressure and momentum going as you slice. But, good for you for showing safety first.

    Food processor works great to shred Brussels sprouts. It’s quicker and safer. I feel a mandoline takes just as long as a knife. A mandoline is GREAT with larger things

    I absolutely love your channel. i also love to cook but I am disabled now due to my back only 55 yrs old but feel 85 sometimes. i am also alone now so I love that you do the freezer meals. One tip that i would like to share (like for your fried sprouts ) I use it a lot with fried potatoes ( my kids loved fried potatoes lol) . When you first put your veggies in the pan add about a fourth of a cup ( or more depending on your pan size) of cold water. This will steam your veggies right off the bat then at the end your water is gone and you can crisp up your veggies the way you like them. Will cook faster. Just a tip.

    Thanks for mentioning "snipping" in this video. I didn't know what it was and I was forever writing down recipes. Now I know how to "zip". Woo Hoo!! Also, will make the macaroni bean thing but think I'll use about a quarter of the macaroni (low carb doncha know?)

    One of my fav originals is a take on green bean casserole. Brown SAGE sausage and mushrooms and small amt onions. Make casserole as regular ( I use golden cream of mushroom soup from can or scratch) add sausage mixture as usual. Adjust amt. Of sausage for side dish or fill casserole. Has been a big hit at potlucks for 30yrs (minus this one lost). Love the Brussels!!

    Brussel sprouts in a salad just three or four per person or roasted in the oven with potatoes and carrots . Than melt butter and mix with maple syrup yummy!!!

    You should try the $30 challenge doing vegetarian and vegan meals. You'd be surprised how much further it can go. Granted you need to be close to a store that has bulk bins or at least an ethnic grocery store like a Mexican grocery store or an Indian grocery store which really helps on cost of produce. One of my vegan Staples is red bell peppers tomato quinoa. It's a can of wash chickpeas with a can of crushed tomatoes and one half of a red bell pepper. You cook the quinoa in that rather than water and it adds a crap load of flavor. It's very high calorie and keep me full for days. I challenge you to find more meatless meals. I like your ideas I think that is great. just giving you a little bit more of a challenge. also if you have any tips on how to make vegan bread and not a complete crumbly mess that would be great. I still have to break out the butter on that one myself oh well

      The majority of homemade bread recipes are vegan, it’s just flour, salt, water, and yeast. Yeast is a one-celled fungal organism, and is in the fungus family along side mushrooms and is considered vegan safe as far as peta is concerned at least, it’s the only thing I could think of that maybe you don’t consider as vegan since a very small minority of vegans do? Are you using a scale to measure out all of your ingredients? It makes a world of difference. I’m no bread expert, I go ask all my questions over on the subreddit breadit, they can most likely give you some experienced advice and perhaps some non-yeast bread recipes they’ve had good success with consistently.

      I do the same, I just discovered that using kitchen towels cover my arms a little bit more than those heat protection things, maybe this tip helps you, also try and do it at arms distance hahahaha

    Thanks for the potato casserole recipe! I needed an easy and cheap dish for a work potluck. This is perfect. I subbed jennie-o turkey sausage because it's what I had in my freezer and turned out great.

    Looove the mandolin, so glad to see you using the protective glove. I wish I had... My missing middle finger tip can attest, THEY ARE SHARP! Yes, I was slicing a potato without using a guard and WHAM! Fingertip gone! It hurt sooooooo bad. It's been almost 11 years & my now shorter finger is still EXTREMELY sensitive, for years if anything touched it, it felt like electricity running thru it. 😱😭😵

    We're a family of 8 and stretching meals is something I'm use to. I had family in visiting one time and had to feed 17 people. So I stretched a meal for around 10 bucks and fed everyone. I bought everything on sale. And it tasted really good

      @@MaryTheresa1986 I had a box of penne noodles, 2 packs of brauts , a 8oz block of mozzarella cheese, and 2 jars of garden spaghetti sauce. I made a baked pasta dish. The noodles I got on sale for 49 cents the brauts were marked down to 99 cents a pack I used 2 packs. They had five in each pack so I cut them up. 2 jars of the spaghetti sauce that was 99 cents each. The block of cheese was on sale for 99 cents. So I shredded it and sprinkled over top. I found 1 loaf of garlic bread that I paid 1.25 for. I cut it up to where each person can have 1 piece. So in all I spent 6.75 to feed 17 people.

    New to the channel and loving your videos, I also have a family of 6 so this is a great channel for me, I do watch other channels with larger family and they great but cooking for 13 people is not something i need. Don't get me wrong i love left overs and freezer meals

    Try Brussel sprouts in a food processor if you have one , stand mixer is great to shred chicken with the paddle attachment.
    Balsamic vinegar reduction ( I make my own just boil down ) is Fabulous on Brussel sprouts .

    To make it easier for you with brussels sprouts or any other veggies juste get yourself some food processor. It’s so easy to slice or grate with it, it saves you a lot of time and it’s saves your fingers as well)))) Cheers

    I just came to say how impressed I am with the gloves that came with your mandolin! Reminder to ALWAYS use them lol you probably don’t need a reminder, but I apparently do! No matter how quick or easy the job seems, ALWAYS USE THE GUARD/GLOVES!! Haha I sliced a chunk off my hand 2 days ago (and I know better!!)

    Very sorry to hear about your family members.
    Happy that you are back in the kitchen.
    The pasta recipe is very similar to one of my favourites but I add canned tomato soup 😀
    Also bacon wrapped brussel sprouts are the best! But I cut the bacon in half so all of it gets crispy. Anyway... all your recipes look great.

    You are the ONLY person I've seen on RUclips that uses food handler gloves like me. I really don't know why more people don't use them. Fajitas look great and I love your shirt!

      I think it came from my mom. She taught food service safety at a University for a couple years and always uses them. I guess it just stuck!
