    I am always left with a feeling of happiness when I finish one your videos. It is just refreshing to see personal, marriage life, and parenting done with such passion, deliberateness, commitment, and a high degree of love. The camera captured it all when Dave ate the loaf cake, and was left speechless. Making his favorite, even if it is not your own, putting in the personal effort to make it yourself, and then being able to share it with him is beautiful! If more American families put this much personal effort in creating a well balanced, commitment to family time, support family physical, mental, and economic "fitness," the state of the American family would be so much stronger. Thank you and your entire family for showing a different perspective, a healthier perspective, on how to create a well balanced family in today's chaotic times.

    If you don't want to do chili cheese fries, just boil or bake the potato and put the chili on top! It's so filling and a good option for those who are trying to cut down on calories!

    For the muffins, make sure the leavening isn’t old, consider your elevation, and one thing many people don’t think about: DON’T OPEN THE OVEN WHEN THEY’RE BAKING, unless it’s the last minute and you take a quick peek to check for brownness. If you open the oven too early, the heat rushing out will cause the muffins to collapse.

    Sautéing your panko in some garlic, butter and Italian seasoning before sprinkling over the mac and cheese is LIFECHANGING!!!!

    Toss the blueberries in flour before adding them to the batter and reserve 1/4 of them from the mix. Fill the muffin trays and then sprinkle the remaining blueberries on top. You'll end up with well evenly blueberries.

    I keep my onions and shallots in the fridge and they don't hurt my eyes anymore! I think the cold makes whatever is it that makes you cry chill a bit.

      Yes! I’m super sensitive to onions (if I visit my mom and she’s cutting and I’m in the next room my eyes sometimes freak out anyway) and a veggie chopper has been life changing.

    When I was 45 my daughter got married and at age 50 I had my first granddaughter. For a total of 4 grandchildren, 3 girls and 1 boy. And our son and his wife share our Halloween anniversary and this year it is 50 years.

    Muffin tip. High temperature for the first 3 mins when putting the muffins in the oven. I suggest 425F for 3mins and 375F til done (about 12 mins for standard size).

      Yes, I heard this recently too. Something to do with giving it a high heat hit for the first few minutes helps it to rise up better and also hold the rise as well so it doesn't sink once you take it out of the oven, good idea! :)

    I cleaned out my freezer and used your Dollar Store Tostada meal idea. Chili from the freezer, cheese, lettuce, tomatoes, Dollar Tree tostada shells. Served with a side of beans and rice from the pantry.

    Christine, keep a container near you when chopping veggies and use it to keep your scraps in the freezer so you can make your own broth :)

      @@adagioborntrager4456 I put mine in the crock pot. And fill with water. I use carrots, celery, green onions, onions etc. I usually make it when I have a half gallons worth of frozen scraps. I also add garlic and other herbs. I cook it on low for 24 to 48 hours. Then strain.

    A blueberry recipe from New Zealand
    Ingredients
    2 cups Standard Grade Flour
    4 tsp Baking Powder
    1 cup Sugar
    1 egg
    1/4 cup Oil (or melted butter)
    1 1/2 cups Milk
    1 tsp grated lemon rind
    2 tsp lemon juice
    1 1/2 cups blueberries
    Icing Sugar to dust
    Method
    Preheat oven to 200°C = 392°F
    Mix all ingredients together in a large bowl until just combined and moistened. Don’t over mix or the muffins will be tough and not rise evenly.
    Spoon into well-greased, deep muffin tins. Bake for 15 - 18 minutes. Cool on a wire rack and dust with Icing Sugar to serve.
    Note: Blueberries can be fresh or if using frozen, use them straight from the freezer. No need to thaw. Canned blueberries need to be well-drained.

    I've been to Costa Rica but that was 15 years ago. It's beautiful, rainy, and gets dark early. Do a rainforest hike and see all the flora and fauna. Eat in some small restaurants, the food is amazing.

    I lived in Costa Rica on and off when I was young and travel back to visit family every couple of years. The best advice I can give you is start saving money now because it is very expensive to do activities. Last time we were there we went white water rafting, zip lining, horseback riding, and visited some of Costa Rica’s islands, it adds up quick. They also have a “national” price and a “tourist” price, so if you have somebody who can speak Spanish and can negotiate for you, they might reduce some of the rates. It is beautiful, you will love it. Also, bug repellent, sunscreen and a poncho are a must.

    Onion-crying tip -- get a little battery operated fan (our Dollar Tree has them in summer), and set it on the counter next to cutting board while you cut onions -- the breeze keeps the sulfur fumes from making it up to your eyes -- it works like a charm!

    For the blueberry muffins, add your blueberries at the end after you coat them with flour, they won't sink and they don't stick to the dough preventing it from rising 🤗🤗

    I live at 6000 Feet altitude and have had problems with baked goods sinking also. To remedy that cut down on Baking Powder and up the flour. If recipe calls for a tsp of Baking Powder, use 3/4 tsp and add a tbsp of f!our. That should solve the problem.

    If you're having trouble with fruit sinking in your bakes try rolling them in flour before adding them to the mix, and add them right at the end. Use as few mixes as possible to work them into the batter and then put them straight in the oven. This works perfectly for my cherry cake.

    For your sheet pan macaroni, add some very finely diced onion to the cheese mixture for more flavor. Can also add a pinch of cayenne pepper for some kick. Add some chopped bacon. Can also add a crushed section of garlic to the cheese sauce. 😳

    Lean over the sink with the water on high (even better if you have a sprayer) let it run and lean down and blink by the water. The water droplets in the air pull the onion out of the air. It helps a LOT. 😁

    Or you can put the chili on baked potatoes! If you crack your eggs into a bowl first you can plop them in easily without turning your mixer off. And no shells because you can remove them easily. Poke holes in the pound cake before pouring on the lemon glaze, it will sink into the cake making it yummier!

    So about the driving teen situation… when I was passenger when my kids were learning to drive I would keep hand crème in the glove box. When I felt like I was going to have a grabber due to fright I would get out the hand crème so I could discretely ring my nervous hands. I survived that learning phase and my hands have never been softer. 😄

    Try taking a little bit of flour and toss the blueberries in it before gently folding into the batter. It helps prevent the blueberries from sinking.

    If you put some flour on your blueberries and gently coat them before you add them to your recipe, it helps to prevent them from sinking to the bottom of the muffins.

    B4 you put the glaze on the pound cake, slice it up, melt a little bit of butter in a skillet and brown the pound cake. Then drizzle the glaze on it. Amazing!

    If you get more yellow squash than you know what to do with, cook and purée a couple and add it to a jiffy mix. Add the milk and egg just as it says on the box and then also add the squash. It is as moist as corn casserole but like half the calories of the corn casserole recipe. My family goes nuts for it.

    use your hand mixer it shreds chicken right up also before you cut yourself onions/shallots put them in a bowl of ice water or fill sink of cold water if you don’t have ice , or just keep them in the fridge it really does help , love yourself your videos :)

    I ❤️ Costa Rica!! Don’t just go to the beach, definitely spend at least a little time in the rainforest - La Fortunate/Arenal Volcano - tons of adventure stuff like zip lining, waterfall repelling (highly recommend!), hot springs, and scenery/wildlife like nowhere else!

    Try putting the oven on 420-425 and sticking the muffins in there for a few and then lowering the temp to what it is supposed to be at.
    Also check the dates on your baking powder. And measure correctly w baking.
    You’ll get it!

    I like the way it is very clear in your videos that you are making the meals for your family to enjoy and you care if they like it and give feedback on what they said. Some of the meal preppers I have watched on YT seem to make a production and appear to just be getting a chore done. Also, there is something to be said about "clean eating" and your "simple" meals fit that well. So thanks for sharing. Will continue to follow your plans. And, hope it works well for your family to go to Costa Rica next year. What a great thing to look forward to!

    We went to Costa Rica! Amazing! We did the Arenol Volcano and swam in the hot springs at the base of it. We saw turtles in their natural habitat...the people are amazing...the food!! OMG THE FOOD! Amazing! We zip lined through what looked like a jungle! I pray u all can go - it will be a trip u will never forget!

    My husband has a friend who farms lamb and cattle who we get our red meat from. We're thinking to find a local goat farmer also. Goat is good! We're just about out of the beef he bought I n January and I'll tell you, having to buy it lately, because I don't have any more ground meat, it's been a killer to the budget.

    Christine, mix cauliflower rice with basmati rice (cook separately, never tried together) my kids don’t even notice. Over time I’ve decreased the basmati and they’ve gotten used to it and like cauliflower rice now!

    I've always heard that when cut onions to make sure you use a very sharp knife if you use a dull one it's breaks down the onion more which will make your eyes water..

    with mac&cheese - try adding just a touch (maybe a tsp per pint of sauce) of english mustard - the really fiery colmans stuff - to it, it really brings out the cheesiness and adds to the flavour.

    I did a week with my teens in Nosara a couple years ago. They surfed 2x/day (with an instructor). Legit, the best vacation we've ever had (and we go everywhere).

    Awesome video as usual! I have two recommendations -
    Put your chicken in a bowl and use a handheld mixer to shred it. This also works in a KitchenAid mixer.
    Toss the blueberries that you're using for your muffins in your flour/leavening agent mixture, before you toss them into the batter, that will stop them from sinking, because elevating agent will help them stay up

    Blueberry tip ✨: If you don’t want you’re blueberries to sink mix them with a little bit of flour from the recipe and mix it altogether

    Try either freezing your onions before slicing or Peel and place in ice water for about 10 min before chopping. Either one should cut down on the onion burn. Give one a try next time.

    Costa Rica!!! Lucky Duck!! One of the best trips of my life. Our family went when my Father-in-law retired. We had a guide that did a pretty good job. Just know that if someone says something is a couple of hours away....it could be 4 or more hours away. Yes, have your kids signed up to surf....they will have a ball!!!

    If you don’t like your blueberries or any berries to sync to the bottom douse them with either corn starch or a little bit of flour before putting them in the batter and that way then they won’t sink

    On the blueberry muffins: I don't know how far up the sides you greased them but, if you maybe grease just the bottoms. I'd seen this tip in either Betty Crocker or Better Homes and Gardens. They prefaced the tip: No ledges on the edges. You might then need to loosen the sides with something non scratching before turning them out.

    Costa Rica - yes, in 1994. Stayed at a former research center turned hotel at Volcan Arenal. All rooms have a view of the volcano that spews lava every night. would recommend, if it still exists. we rented a car and drove there over a wooden suspension bridge (yikes!). also, one of the parks has a river that you wade across to get in. a memorable trip for sure!
