I have done similar but have much less. A camping mattress in the floor and tiny toilet. 4 packing cubes for clothes. I love my life with no power and no fridge. I do cook at work. 5 minute meals like eggs. Gym shower. So when I retire I shall copy your setup
Your modular designs are my favorite van builds. It reminds me of a small Japanese apartment that needs to be modular to utilize the space. I will be doing this in the summer after I save up for a Van. I wish to purchase your boxes.

The stow and go is still available for new models, but the swivel and go that included a detachable table was optional for models from 2008 to 2011 and was discontinued.
